PM Sous chef, fine dining a la carte line

Carlouel Beach and Yacht Club has an opening for a PM sous Chef. Primary responsibilities will be overseeing PM fine dinning line, with a focus on lunch service as well. Candidate will be responsible for overseeing a staff of three cooks and two stewards. You will be responsible for closing. Candidate will work with Executive Chef writing menus and will be held accountable for executing menus. Job duties will include but not limited to the following:

-Ordering produce for the restaurant and coordinating with banquet chef as needed

-Overseeing all mise en place production for the PM line as well as assisting with the lunch line

-Working closely with Executive Chef on menu creation

-Fabrication of meats and seafood for a la carte lines

-Assisting in production of stocks and sauces

-Ability to work each station on the line, as well as be a floater during peak volume for lunch and dinner

-Ability to interact with members\guests if needed

-Will be responsible for attending nightly line-ups with FOH staff

-Must always maintain composure, you are a professional

-Assisting with Executive sous chef and Executive Chef with inventory

-Coordinating meat and fish purchases with the Executive Chef

-Ensuring kitchen is closed down properly

 

Our Club is open Wednesday-Sunday, with Monday and Tuesday being your days off. Culinary degree is highly preferred. Candidate is expected to work a minimum of 50 hours per week. Base salary will be 48k with benefit package (health, dental, vision, 401k w\ match, PTO, HSA account with monthly contribution by club) We are looking to start this position no later than March 1st.
