Evelyn Overton from Detroit, Michigan, created a cheesecake that inspired the company's Original Cheesecake, selling it to restaurants throughout the area. It wasn't until 1972, however, that she and her husband moved to Los Angeles and opened the Cheesecake Factory Bakery. The first restaurant was opened in 1978 in Beverly Hills, California.
