AM Sushi Prep

New concept being developed by Duro Hospitality.

Prep Cook position with a strong but not exclusive focus on sushi station & fish manufacturing prep.

• This person is responsible for:
• properly cleaning, cutting, storing & portioning fish & other proteins for service.
• maintaining health & sanitation standards therein.
•  daily inventory of all proteins in refrigeration and freezer with which to assist Chef team with ordering.
• any prep work designated by Chef team for sushi, garde manger & hot line stations.
• Daily cleaning projects in areas designated by the chef team.
