JOB SUMMARY The Assistant Kitchen Manager AKM supports the Kitchen Manager in overseeing back-of-house operations driving excellence in areas such as staffing food safety inventory management par levels and overall plate presentation. The AKM is expected to work 45-50 hours per week with a schedule that may include days nights weekends and holidays based on business needs. PURPOSE OF THE POSITION To assist in ensuring the highest quality of food execution and providing an exceptional guest experience through food preparation and presentation. MAIN JOB FUNCTIONS OPERATIONAL EXCELLENCE - KITCHEN Maintain the highest standards of safety security and health within the kitchen by adhering to all Brand standards and procedures. Ensure compliance with all safety and sanitary regulations. Communicate new menu rollouts ingredients and plate presentations according to Brand standards. Support and ensure proper mise en place prep is completed in a timely manner to guarantee smooth AMPM service. FISCAL RESPONSIBILITY - KITCHEN Assist in monitoring portion control and food preparation quantities to minimize waste. Regularly check food rotations FIFO proper date labeling of meats dairy and produce. Support waste control efforts by maintaining efficiency in ticket times reducing comps and ensuring proper protein temperatures. Monitor food costs by reviewing invoices inventories and vendor pricing under the guidance of the Kitchen Manager. STAFFING - KITCHEN Assist in recruiting and retaining strong back-of-house candidates. Help plan organize and direct the back-of-house team to meet daily standards. Support the development and training of back-of-house team members including cross-training internal development and accountability. Provide timely feedback and guidance to team members on their performance. PHYSICAL DEMANDS AND WORK ENVIRONMENT Prolonged standing bending stooping twisting and repetitive hand and wrist motions. Lifting products and supplies weighing up to 50 pounds. Working in a fast-paced loud and occasionally hot or physically demanding kitchen environment.
