Barback

The Barback plays a vital role in supporting the bar team by ensuring bartenders have everything they need to deliver an exceptional guest experience. This position is responsible for maintaining a clean, organized, and fully stocked bar while anticipating operational needs throughout service. The ideal candidate is energetic, detail-oriented, organized, and thrives in a fast-paced fine dining environment.

Key Responsibilities

Bar Preparation

• Prepare the bar before service by stocking all liquor, wine, beer, mixers, garnishes, glassware, ice, and bar supplies.
• Prepare fresh garnishes according to MIKA's recipes and presentation standards.
• Ensure all refrigeration units are properly stocked and organized.
• Verify that all bar equipment is clean and functioning properly before service.
• Maintain proper par levels of all beverages and supplies throughout the shift.

During Service

• Continuously replenish ice, glassware, liquor, beer, wine, mixers, garnishes, napkins, and bar tools.
• Remove empty bottles, used glassware, and trash promptly.
• Wash, polish, and organize glassware throughout service.
• Assist bartenders in maintaining a clean and efficient workspace.
• Keep bar stations organized, clean, and fully stocked at all times.
• Restock products from storage areas as needed.
• Assist with receiving and properly storing beverage deliveries.
• Communicate low inventory levels to management.

Closing Duties

• Complete all assigned closing side work.
• Thoroughly clean all bar surfaces, equipment, sinks, drains, coolers, and storage areas.
• Wash and sanitize bar tools and equipment.
• Restock the bar for the following shift.
• Dispose of trash, recycling, and empty bottles according to company procedures.
• Sweep and mop all bar areas.
• Ensure all products are properly labeled, dated, and stored.
• Assist with securing the bar according to closing procedures.

Hospitality & Teamwork

• Support bartenders to ensure efficient and seamless guest service.
• Maintain a positive, professional attitude while working collaboratively with the entire restaurant team.
• Respond quickly to bartender requests and anticipate operational needs.
• Follow all health, sanitation, and alcohol service regulations.
• Maintain MIKA's grooming, uniform, and appearance standards.
• Participate in all required training sessions and team meetings.

Qualifications

• Previous restaurant or barback experience preferred.
• Experience in upscale or fine dining is a plus.
• Basic knowledge of spirits, wine, beer, cocktails, and bar equipment preferred.
• Strong work ethic with a willingness to learn.
• Ability to work efficiently under pressure.
• Excellent organizational and time management skills.
• Positive attitude with a strong team-oriented mindset.
• Flexible availability, including evenings, weekends, and holidays.
• Food Handler Certification and responsible alcohol service certification, as required by state and local regulations.

Physical Requirements

• Ability to stand and walk for extended periods.
• Ability to frequently lift and carry up to 50 pounds.
• Ability to transport kegs, liquor cases, ice, and beverage supplies safely.
• Ability to bend, stoop, reach, push, and pull throughout the shift.
• Comfortable working in a fast-paced, high-volume environment.
