The Certified Dietary Manager (CDM) is responsible for overseeing the daily operations of the dietary department in a skilled nursing facility. This role ensures residents receive nutritionally adequate, appealing meals that meet physician orders, regulatory standards, and individual dietary needs. The CDM supervises dietary staff, maintains compliance with CMS and state regulations, and promotes a safe and sanitary food service environment.
Essential Duties and Responsibilities:
Manage daily food service operations, including meal preparation, service, and sanitation.
Ensure compliance with CMS, state regulations, and food safety standards.
Collaborate with the Registered Dietitian to implement therapeutic and modified diets.
Review physician diet orders and ensure accurate tray line execution.
Supervise, schedule, and train dietary staff.
Monitor food inventory, purchasing, and budget management.
Conduct quality assurance audits and implement corrective actions as needed.
Maintain accurate documentation related to sanitation logs, temperature logs, and resident dietary records.
Participate in care plan meetings and interdisciplinary team discussions.
Ensure proper infection control and food handling practices.
Qualifications:
Certified Dietary Manager (CDM) credential
Food Protection Manager Certification (ANSI-accredited) as required by state regulations.
Food service management experience, preferably in long-term care or healthcare.
Knowledge of therapeutic diets, texture modifications, and nutrition standards for geriatric populations.
Familiarity with CMS, state survey processes, and infection control standards.
Strong leadership and organizational skills.
