Position Summary

The Chef de Cuisine plays a critical leadership role within the Food & Beverage department, working directly under the Executive Chef to oversee daily kitchen operations and future culinary planning. This position is responsible for supervising culinary staff, maintaining food and labor cost controls, ensuring operational efficiency, and upholding the highest standards of food quality, presentation, and service.

The ideal candidate is a hands-on culinary leader with strong organizational skills, a passion for mentoring teams, and the ability to deliver a world-class dining experience in a private club environment.


Essential Duties & Responsibilities

  • Work directly under the Executive Chef to help develop and maintain a world-class culinary program for Kukio members and guests

  • Foster a positive kitchen culture aligned with Kukio’s mission, values, and service philosophy

  • Assist in managing food cost, labor cost, and overall departmental budgets

  • Oversee scheduling and payroll for culinary, stewarding, receiving, and farm staff

  • Supervise daily kitchen operations across all outlets to ensure efficiency, consistency, and quality

  • Assist with menu planning and development for breakfast, lunch, dinner, banquets, and catering

  • Inspect menus daily and place vendor orders as needed

  • Ensure food preparation is economical, technically correct, and meets quality standards

  • Oversee purchasing, requisitions, inventory control, and end-of-month food transfers

  • Assist with hiring, onboarding, training, performance reviews, and disciplinary actions for culinary staff

  • Expedite service during all meal periods as needed

  • Interact professionally with members and guests; respond to special requests and concerns via phone or email

  • Coordinate with other departments to support overall club operations

  • Assist with banquet and catering package development

  • Oversee and participate in special events, buffets, private dinners, and cooking classes

  • Assist with or lead monthly staff training sessions as directed by the Executive Chef

  • Serve as acting Executive Chef when required


Qualifications

Education & Experience:

  • Culinary degree or equivalent professional experience preferred

  • Previous Chef de Cuisine or Senior Sous Chef experience required

  • Experience in fine dining, luxury hospitality, or private club environments strongly preferred

Skills & Abilities:

  • Strong leadership and team development skills

  • Excellent organizational, time-management, and multitasking abilities

  • Advanced knowledge of food preparation, kitchen operations, and culinary techniques

  • Ability to communicate clearly with staff, leadership, and club members

  • Comfortable interacting directly with members and guests

  • Strong problem-solving skills and attention to detail


Physical & Work Environment Requirements

  • Ability to lift and carry items up to 70 lbs

  • Frequent bending, kneeling, pushing, pulling, and standing during food production

  • Ability to work in varied temperatures including freezers (25°F), walk-in coolers (40°F), and kitchen environments up to 110°F

  • Occasional outdoor work in warm conditions (90–100°F)

  • Ability to operate kitchen equipment including ovens, stoves, fryers, kettles, steamers, and slicing/chopping machines

  • Daily use of cleaning and sanitizing chemicals

  • Required to wear proper chef attire including covered shoes, chef jacket, apron, and hat
