    Boulon Brasserie is currently hiring a Chef de Partie to join our team.
     
    Located in downtown Tampa, Boulon Brasserie, has three distinct  dining experiences; restaurant, bar, and café.  Boulon’s menu highlights locally sourced ingredients, fresh caught seafood and a modern interpretation of classic French pastries.
     
    Job Summary
    A Chef de Partie is responsible to manage a specific section of the line, ensuring high-quality food preparation, safety and smooth service operations under the guidance of the Executive Chef and/or Sous Chef.  They are required to produce all assigned menu items in an efficient and consistent manner while following Next Level Brands’ specifications, recipes and technique and maintaining sanitation standards.
     
    Responsibilities
    • Manage and execute all food production in designated station.
    • Follows Executive Chef and Sous Chefs assignments for opening and closing procedures and food preparation.
    • Oversee, coach and train cooks assigned to designated station.
    • Prepares food items by complying with portion size, quality standards, departmental rules, policies and procedures.
    • Maintains food safety standards ensuring a high-quality level of food, food temperatures, rotation of product, cleanliness and sanitation standards
    • Maintains cleanliness of kitchen including walk-in coolers, dry storage, shelves, walls, floors and drains.
    • Ensures all food preparation equipment is clean and sanitized and that it is kept in a safe and operable condition; report issues to lead or supervisor
    • Identifies and stores meats, poultry, seafood, pasta, starches, dairy products, and all other food items according to established standards
    • Participates as a team player with specific responsibilities as related to preparation, excellent service and delivery of product.
    • Must maintain a pleasant attitude towards customers, co-workers, and management
    • Follow all food safety requirements guidelines as defined by the Florida Department of Health.
    • Practice safe work habits, follow all safety policies and procedures and regulations, complete company-wide safety training and additional job specific safety training.
    • Arrive on time and ready to work for all scheduled shifts.
    • Adhere to the dress code, appearance, and grooming standards as outlined in training manuals.
    • Clock in and out for each scheduled shift.
    • Attend all mandatory staff meetings.
    • Follows all standards, procedures and policies that have been established by Next Level Brands.
    • Perform other duties and responsibilities as assigned.

    Qualifications and Requirements
    • Minimum 2-3 years of hands-on experience in a fast-paced, upscale, professional kitchen.
    • Culinary degree or equivalent professional trade certification preferred
    • Be able to communicate in a professional manner with all levels of staff.
    • Strong attention to detail.
    • Excels in a team environment and is viewed as a team player by all Team Members.
    • A strong work ethic and desire to learn and grow.
    • Elevated time management, organizational, and prioritizing skills
    • Strong knife skills and kitchen equipment knowledge
    • Must be able to obtain food safety certification
    • Able to be self-motivated and work independently or as a team player
    • Must be at least 18 years old
    Physical Requirements
    • Must have sufficient mobility to perform assigned tasks including constant reaching, bending, stooping, wiping, pushing, and pulling for extended periods of time.
    • Ability to lift and transport food and other items weighing up to 30 pounds, occasionally 50 pounds.
    • Must be able to stand and/or walk for up to 10 hours during a single shift, while possibly navigating ramps, stairs, and elevators.
