We are not hiring someone to supervise a kitchen they have never run. We are hiring someone who wants to learn ours from the inside, then lead it. Your first 30–60 days are spent on the line as a paid Team Member — breading, fryers, prep, boards, closing. You learn every position, first. Once you have proven you can run the kitchen yourself, you begin Coordinator training and start leading PM shifts.

The Job, Honestly
You will be on your feet the entire shift, moving with purpose, in front of six Henny Penny pressure fryers and four open fryers.
You will also close. That means you own the last three hours of the night when most of our volume is behind us and most of our standards are on the line — clean equipment, accurate waste, correct pars for tomorrow, and a team that has given everything they had that day. Getting that right every single night is the skill that separates a good closer from a great leader.
Your First 30–60 Days
- Learn and certify on every BOH station: Breading, Primary, Secondary, Prep, Trucks
- Master food safety, holding times, and temperature standards until they are automatic
- Learn our positional checklists, cleaning verification, and boil out schedules
- Work closing shifts and learn what a correct close actually looks like
- Get to know the team genuinely
Once You Are Coordinating
Every order that leaves your kitchen is somebody's dinner. Your job is that it is right, every time, whether it is 12:15 or 9:45.
- Run the PM kitchen: staffing the boards, calling product, managing throughput during rush
- Hold the standard on food quality, food safety, and cleanliness — including when it is 9:45 PM
- Coach team members in the moment, on the line, with respect
- Manage waste and food cost so we hit our targets, not just our sales
- Train new team members to 4-star and develop the next person behind you
- Close the restaurant, complete the checklists, and set the AM team up to win
Qualifications and Requirements
- Someone who works with urgency and takes ownership without waiting to be asked
- Comfort with heat, pace, and physical work for a full shift
- Willingness to coach a peer respectfully — and care enough to do it
- Attention to detail on things nobody is watching
- Reliable transportation and consistent PM availability, including Saturdays
- Kitchen experience is helpful. Coachability matters more.
