Description of Work

Knowledge Skills and Abilities/Management Preferences

This position is located at Hyde Correctional Institution. Provides direct supervision of the Food Service Department in the preparation and service of regular and therapeutic diets for the inmate population at a minimum custody institution. Responsible for the planning, directing and supervision of the preparation and serving of food to the inmates. Manage the ordering of food to the inmates. Manage the ordering of food, preparation and serving of food, sanitation, the proper operation of equipment and ensure that the master menu and recipe cards are followed daily. Will be responsible for budget monitoring of the food service section. Will be required to follow established administrative policies and directives pertaining to fiscal aspects of food service operation. Responsible for the maintenance of a master therapeutic diet menu, and will ensure the generation, maintenance, disposition and accuracy of the diet administration record. Responsible for regular inspections to ensure all custody, security and safety regulations are being followed. Will be responsible for the supervision of Food Service Supervisor I and Food Service Officers. Will manage and monitor procedures for maintenance and control of all tools and equipment.

Salary Range:  $39,244 - $68,679

• The ability to provide leadership necessary to organize and supervise the activities of the food service operation.

• Must be knowledgeable in food service management techniques and health regulations to ensure proper food preparation, storage and sanitation of the food service sections.

The salary grade for this position is NC07.  State employees are encouraged to apply for positions of interest even if the salary grade is the same as, or lower than, their current position.  If selected for this position, a new salary will be recalculated taking into consideration the quantity of relevant education and experience, funding availability, and internal equity.  Based upon these factors, a pay increase May result.

About the Division of Institutions:

The Division of Institutions manages the daily operations of all state-operated prison facilities across North Carolina. Facilities are categorized by custody levels (minimum, medium, close) and house individuals serving sentences for felony convictions. The division provides safety, security, and rehabilitative services through trained custody staff, program facilitators, and administrative personnel.

Minimum Education and Experience

High school or General Educational Development (GED) diploma and four years of experience in institutional food preparation and food services, in management of a commercial food service operations, or one year as a Correctional Food Service Supervisor; or an equivalent combination of education and experience. Necessary Special Qualifications Must be eligible for certification by the North Carolina Criminal Justice Education & Training Standards Commission.
