Director of Culinary Services

Description of responsibilities:

  • Develop and implement food service policies and procedures

  • Prepare food items using recipes in a timely manner

  • Determine food and supply needs

  • Coordinate meal production with service hours

  • Monitor food items for temperature, taste, and quality

  • Ensure the proper preparation, portioning and serving of foods per the menu cycle and recipes

  • Taste and prepare food for quality assurance

  • Interact with residents during meal service

  • Track meals served

  • Follow all federal, state, local laws and regulations regarding food handling

  • Monitor and correct safety and sanitation procedures in the kitchen

  • Plan menus according to cultural/regional food preferences and resident dietary guidelines

  • Adjust recipes to appropriate yield

  • Develop culinary services budget and monitor adherence

  • Order food and chemical supplies for the kitchen

  • Complete food inventory monthly

  • Receive all food deliveries

  • Schedule culinary department teammates

  • Oversee daily operations of the culinary service department

  • Perform other duties as assigned

Required experience:

  • Bachelor’s Degree in a culinary arts program preferred

  • Minimum five (5) years of management experience in a food service environment

  • Successful completion of food safety training

  • Previous experience working with order processing systems

Required skills: 

  • Ability to communicate effectively

  • Interest in working with a senior population

  • Demonstrated customer service skills

  • Organizational and time management skills

  • Ability to work a flexible schedule
