Summary
The Ontario Airport Hotel & Conference Center, currently affiliated with Hyatt, is undergoing an extraordinary top-to-bottom transformation and will soon debut as the premier Hyatt Regency Ontario. As we prepare to unveil our newly reimagined dining venues-including a Mediterranean concept restaurant, bar, marketplace, and enhanced food service offerings-we are seeking an exceptional Director of Food & Beverage to lead this exciting transition. This is a rare opportunity to shape the culinary vision, build a distinctive guest experience, and leave your own mark on a landmark luxury destination poised to redefine hospitality in the region.
Key Responsibilities
- Provide strategic leadership and operational oversight for all Food & Beverage outlets, including the signature restaurant, lounge and bar, marketplace, in-room dining, banquets, catering, and future concepts.
- Lead the Food & Beverage division through the hotel's transformative renovation and conversion to Hyatt Regency, overseeing the development, opening, and successful launch of all new dining venues and experiences.
- Collaborate closely with the Executive Chef, who reports directly to this position, to drive culinary excellence, menu development, concept creation, and consistent execution across all outlets, including banquet and catering operations.
- Partner with ownership, architects, designers, and hotel leadership throughout renovation and pre-opening phases to ensure operational readiness, equipment selection, service flow, and brand alignment.
- Ensure all outlets operate in accordance with Hyatt Regency brand standards while delivering exceptional quality, innovation, and memorable guest experiences.
- Drive revenue growth and profitability through strategic planning, effective cost controls, labor management, and operational efficiencies.
- Oversee the development and implementation of marketing and promotional initiatives to elevate outlet visibility and enhance the overall guest experience.
- Manage departmental financial performance, including budgeting, forecasting, inventory management, procurement, and expense controls to achieve revenue and profitability goals.
- Maintain the highest levels of guest satisfaction by fostering a culture of service excellence and promptly resolving guest concerns in a professional manner.
- Recruit, mentor, and develop high-performing leaders and team members, creating a culture of accountability, engagement, and continuous improvement.
- Work collaboratively with Culinary, Sales, Catering, Events, Rooms, and other departments to deliver seamless operations and maximize hotel performance.
- Ensure full compliance with health, safety, sanitation, and regulatory requirements across all Food & Beverage operations.
- Direct staffing strategies, scheduling, inventory control, purchasing, and operational standards to ensure efficient and profitable day-to-day operations.
- Serve as a key member of the Executive Leadership Team, championing innovation and positioning Hyatt Regency Ontario Airport as a premier culinary and hospitality destination

Qualifications
- Bachelor's degree or diploma in Hospitality Management, Hotel Administration, Culinary Management, Business Administration, or a related field preferred.
- Minimum of 10 years of progressive Food & Beverage leadership experience in a full-service, upscale, luxury, or resort hotel environment, with at least 3 years at the Director-level or senior leadership level preferred.
- Hyatt experience strongly preferred; familiarity with Hyatt brand standards, systems, and operational requirements is highly desirable.
- Proven success leading complex, high-volume food and beverage operations, including restaurants, bars, banquets, catering, and in-room dining.
- Demonstrated experience supporting hotel renovations, repositioning projects, rebranding initiatives, or new outlet openings preferred.
- Strong financial acumen with experience managing budgets, forecasting, labor controls, cost of sales, revenue optimization, and profitability.
- Strong understanding of food and beverage trends, luxury hospitality standards, service excellence, and market dynamics.
- Excellent leadership, communication, presentation, and interpersonal skills, with the ability to effectively collaborate across departments and with ownership groups.
