Job Summary We are seeking a dependable and experienced cook to prepare nutritious meals for children and elderly individuals. The ideal candidate is organized, efficient, and passionate about preparing fresh, well-balanced meals while maintaining a clean and safe kitchen.
Position Details: Department: Production Reports To: Chef /Operations Manager Shift: Overnight (9:00pm to 4:00pm)
Position Summary
The Overnight Expeditor is responsible for assembling, finishing, and preparing meals for packaging and delivery after ingredients have been prepared by the Prep Cook team. This position ensures every meal is completed according to recipes, portion standards, customer specifications, and food safety regulations before being packaged for distribution to schools, senior nutrition programs, and other catering clients.
Essential Duties and Responsibilities
Assemble and finish meals using ingredients prepared by the Prep Cook team.
Follow standardized recipes, production sheets, and portion control guidelines.
Add final ingredients, sauces, garnishes, or components to complete each meal.
Ensure meals meet appearance, quality, and presentation standards.
Verify proper portion sizes and ingredient accuracy.
Assemble special diet, allergy, vegetarian, and texture-modified meals according to production requirements.
Work closely with packaging staff to ensure meals are correctly labeled and prepared for delivery.
Inspect completed meals for quality, temperature, and accuracy before packaging.
Maintain production flow to meet overnight deadlines and delivery schedules.
Notify supervisors of ingredient shortages, quality concerns, or production issues.
Maintain a clean, organized, and sanitary workstation.
Follow all HACCP, USDA, FDA, and company food safety and sanitation procedures.
Assist with end-of-shift cleanup and preparation for the next production cycle.
Qualifications
Previous experience in commercial kitchens, catering, commissary, institutional food service, or school nutrition programs preferred.
Ability to read recipes, production sheets, and meal assembly instructions.
Strong attention to detail and portion accuracy.
Ability to work efficiently in a fast-paced production environment.
Dependable with excellent attendance.
Physical Requirements
Stand for extended periods.
Lift up to 50 pounds.
Work in refrigerated environments when necessary.
Perform repetitive meal assembly tasks while maintaining speed and accuracy.
