Food & Beverage Director

The Food & Beverage Director provides strategic leadership and operational oversight for all food and beverage operations throughout the casino resort. This position is responsible for leading multiple restaurant concepts, casino floor beverage service, bars, catering (if applicable), and culinary partnerships to ensure exceptional guest experiences, operational excellence, financial performance, and regulatory compliance.

The Food & Beverage Director oversees a diverse portfolio of dining experiences including fast casual, full-service restaurants, upscale dining, casino beverage service, and bars while leading approximately 600 team members through a team of General Managers, Restaurant Managers, Executive Chefs, Beverage Managers, and other department leaders.

This position is responsible for developing leaders, driving profitability, ensuring compliance with all gaming, alcohol, health, and safety regulations, and fostering a culture that reflects the organization's Mission, Vision, and Core Values.

Essential Functions and Responsibilities:

  • Embodies Traditions Vision, Mission and Core Values.
  • Establish and maintain a professional and cordial rapport, acting as a liaison between Traditions Hospitality and Casino staff and management.
  • Communicate daily with the Chief Operations Officer on projects and operational activities; submit weekly flash reports and manager's reports.
  • Provide strategic leadership for all food and beverage operations across multiple outlets.
  • Lead, coach, mentor, and develop General Managers, Restaurant Managers, Executive Chefs, Beverage Managers, and other leadership team members.
  • Build a culture focused on accountability, guest satisfaction, operational excellence, and employee engagement.
  • Conduct regular operational reviews to evaluate performance, identify opportunities, and establish action plans.
  • Maintain consistent service standards across all concepts while preserving each outlet's unique identity.
  • Collaborate with Executive Leadership on long-term operational strategies and capital improvement initiatives.
  • Promote an environment that supports teamwork, respect, diversity, and continuous improvement.

Financial Management

  • Develop and manage annual operating budgets.
  • Monitor revenue, labor, food cost, beverage cost, and controllable expenses.
  • Analyze financial reports and operational metrics to maximize profitability.
  • Establish financial goals for each outlet and hold leaders accountable for achieving results.
  • Develop strategies to increase sales, improve efficiencies, and reduce waste.
  • Review menu pricing and profitability in collaboration with Culinary leadership.
  • Ensure proper inventory controls and asset protection.

Food Operations

  • Oversee all restaurant concepts including:

  • Fast Casual Dining

  • Full-Service Restaurants

  • Upscale Dining

  • Banquets and Special Events

  • Partner with Executive Chefs to maintain consistent food quality and presentation.

  • Ensure menu execution meets brand standards.

  • Evaluate guest feedback and implement service improvements.

  • Support new menu development and seasonal promotions.

Beverage Operations

  • Provide leadership for all beverage operations throughout the casino.

  • Oversee:

  • Casino floor beverage service

  • Bars and lounges

  • Cocktail service

  • Bartending operations

  • Ensure compliance with all alcohol service laws and gaming regulations.

  • Monitor beverage inventory, purchasing, and cost controls.

  • Maintain responsible alcohol service standards.

Guest Experience

  • Champion legendary guest service throughout every operation.
  • Respond to significant guest concerns and service recovery situations.
  • Review guest satisfaction metrics and implement continuous improvements.
  • Ensure cleanliness, organization, and appearance standards exceed expectations.
  • Foster memorable guest experiences across all dining venues.

Team Development

  • Recruit, hire, develop, and retain high-performing leaders.
  • Conduct performance evaluations and succession planning.
  • Coach managers on employee relations, performance management, and leadership effectiveness.
  • Promote employee recognition and engagement initiatives.
  • Build internal talent pipelines for future leadership positions.

Compliance & Risk Management

  • Ensure compliance with:

  • Health Department regulations

  • Food Safety standards

  • HACCP guidelines

  • OSHA requirements

  • Gaming Commission regulations

  • Alcohol Beverage Laws

  • Company SOPs and policies

  • Maintain ServSafe certification requirements.

  • Ensure all required alcohol certifications remain current.

  • Participate in internal audits and regulatory inspections.

  • Minimize operational risks through proactive leadership.

  • Assist in planning casino promotions, entertainment events, VIP functions, and special events.

  • Support organizational initiatives and cross-functional projects.

OTHER DUTIES AND RESPONSIBILITIES:

NOTE: These include, but are not limited to the following (additional responsibilities may be assigned as necessary):

  • Providing information to supervisors, co-workers, and subordinates by telephone, in written form, e-mail, or in person
  • Performing day-to-day administrative tasks such as maintaining information files and processing paperwork
  • Assisting the VP of Southern Operations with special projects as needed
  • Recruiting, interviewing, selecting, hiring, promoting, and terminating employees
  • Development of all staff
  • Aware of any and all potentially hazardous conditions within the food and beverage operation
  • Uniforms and/or clothing should always be "on stage clean."
  • Create and support an environment of "Teamwork" by helping a fellow employee or guest, without a second thought
  • Superior attendance and punctuality
  • Attendance in mandatory meetings, training, workshops, and/or seminars
  • Adhere to organizational policies and procedures.

REQUIRED QUALIFICATIONS (INCLUDES EDUCATION, SKILLS, AND EXPERIENCE):

  • Bachelor's degree in area of specialty, preferred.
  • Must be 21 years of age or older.
  • Must possess or be able to obtain a Gaming License from Chickasaw Nation.
  • Must possess or be able to obtain an Oklahoma Liquor License (ABLE)
  • Minimum 10 years of progressive Food & Beverage leadership experience.
  • Minimum 5 years in a senior multi-unit leadership role.
  • Casino food and beverage leadership experience strongly preferred.
  • Experience overseeing multiple restaurant concepts simultaneously.
  • Proven experience managing large teams of 300+ employees.
  • Experience managing multimillion-dollar operating budgets.
  • Comprehensive knowledge of business and management principles, including strategic planning, resource allocation, organizational leadership, operational management, production methods, and the effective coordination of people, processes, and resources to achieve organizational objectives.
  • Knowledge of principles and processes for providing guest and personal services; this includes guest needs assessment, meeting quality standards for services, and evaluation of guest satisfaction.
  • Knowledge of economic and accounting principles and practices, banking and the analysis and reporting of financial data
  • Knowledge of laws, legal codes, government regulations regarding the beverage service industry
  • Excellent oral and written communication skills
  • Excellent computer skills, ability to compose and create reports, letters, memos, and procedures.
  • Mature judgment and professionalism in handling all matters.
  • Ability to read and understand information and ideas presented in writing.
  • Excellent math skills
  • Excellent organization and problem-solving skills.

WORKING CONDITIONS AND PHYSICAL EFFORT:

The physical demands described are representative of those required to successfully perform the essential functions of this position.

  • Frequently stand and walk for extended periods (8-12 hours).
  • Frequently navigate multiple restaurant venues, kitchens, bars, and casino floor areas.
  • Occasionally lift and carry up to 50 pounds.
  • Occasionally push or pull equipment or supplies.
  • Ability to climb stairs and maneuver through crowded operational environments.
  • Ability to respond quickly to operational emergencies.
  • Evening, weekend, holiday, and extended work hours are required.
  • Travel between casino outlets and company locations may be required.
