Food Safety and Quality Lead

Schedule: “Making the workplace a remarkable experience for our Team”

• Write the schedule
• Release the schedule every Friday at 5PM
• Write leadership schedule, rotating closing shifts and days off
• Adjust hourly staffing numbers to account for fluctuation in sales
• Monitor goal vs actual report to ensure the schedule accurately reflects time worked
• Schedules hours through the priority: availability, attendance, performance
• Monitors performance tracking sheet to decrease hours for team members with performance issues
• Focuses on the high performers and ensures they are prioritized with hours.
• Ensures there is always an opening team lead and a closing team lead. 
• Approves/denies changes in availability with team members to ensure that the new availability fits into the requirement for their area. 
• Approves/denies time off requests to ensure we have enough team members to work each day
• Approves/denies shift swaps and shift pickups
• Balances closing shifts for open availability team members so no one burns out

Food Safety: “Guarding the Brand and Winning Hearts Through a Clean and Food Safe Environment”

• Manages Food Safety Reports and creates systems to address shortcomings in current procedures.
• Oversees completion of Daily SAFE, ERQA, and Food Safety Walk-Thru
• Ensures all food safety procedures are being followed
• Personally temps chicken and checks labels through every shift
• Ensures the captain level and above knows what to look for with food safety issues and how to resolve them.
• Conducts a weekly Food Safety walkthrough and communicates the results with our team. 
• Reviews previous Ecosure audits to ensure we never have a repeat issue
• Updates Food Safety walkthroughs when it is needed. 
• Reviews daily walk-thru to identify common issues and implements systematic changes

Food Quality: “Consistent quality the guest can expect”

• Ensures a culture of prioritizing food quality over waste.
• Ensures all lean ipads are on and being followed.
• Tracks lean ipads to ensure accuracy and usage from all team members.
• Tracks and owns AHA system usage score.
• Tracks and owns AHA hold time <20 minutes goal.
• Ensures all pans are being scanned in and out appropriately.
• The entire team follows the lean iPad’s number of how many items to keep in chutes.
• Fries are following hold time and freshness level.
• Tracks and manages CEM and guest feedback and relays information to the team. 
• Breaks down our CEM Taste score every week to find focus points for the team.
• Completely owns the Deloitte QIV visit and ensures each Team Lead and above is trained with the visit.
