This position is located at the SC Department of Behavioral Health and Developmental Disabilities (DBHDD) - Office of Mental Health Crafts-Farrow, 7901 Farrow Rd, Columbia, SC 29203.

As the Food Service Specialist IV / Trayline Supervisor you will work under the Trayline Manager and/or Area Managers supervising assigned staff in operation of the trayline, plating & portioning areas in compliance with department, local, state, and federal guidelines.

Responsibilities for the Food Service Specialist IV:

• Supervise staff in preparing, portioning, assembling, and serving meals per menu specification. Supervise the verification of food service accuracy and follow all prescribed procedures and instructions.
• Supervise and monitor all activities in trayline areas including, but not limited to, food rethermalization, refrigeration equipment, serving/assembling meals and ensure compliance with all established procedures for cleaning and sanitizing to serve clients hot and cold meal requirements.
• Evaluate and complete employee annual performance review for assigned personnel. Prepare staff schedules to provide effective coverage, assign job duties, and organize staff for daily work production requirements.
• Supervise the maintenance of records for inventories, quality control, quality assurance, sanitation check list, temperature, charts, and all other records necessary for the operation of the trayline area. Maintain HACCP (Hazard Analysis Critical Control Point) standards compliance in all work areas.
• Provide required service in a pleasant, helpful, and positive manner to demonstrate good customer service as well as train new staff.
• Adheres to patients privacy and "Bill of Rights" standard requirements while performing duties.

Minimum and Additional Requirements

• Related food service expereince.
• A high school diploma and three (3) years of supervisory experience in large food service operation.
• ServSafe certification within three (3) months of hire.

Additional Requirements

• Ability to manually lift 40 lbs. Ability to walk or stand for extended periods of time. Ability to bend, stoop, reach, pull, push, climb stairs or stand for extended periods of time.
• Ability to encounter temperatures ranging from 20 degrees F to 400 degrees F around equipment.

Preferred Qualifications

• Certified Dietary Manager (CDM) credential.
• Bilingual abilities in English and Spanish (or another language) are a plus.

Additional Comments

Post hire, employees must:

• Possess a strong knowledge of cafeteria style/mass food service operation, customer service application, and safe handling of food.

• Have ability to supervise and lead staff in meeting required food production and solve problems that arise, general working knowledge of food service equipment.

This is considered an essential position during an emergency.
