Job Summary: The Grill Cook is responsible for preparing and cooking premium steaks, seafood, and other grilled menu items to restaurant specifications while maintaining the highest standards of food quality, consistency, sanitation, and kitchen safety. This role is essential to delivering an exceptional dining experience by preparing each dish with precision in a fast-paced, high-end environment.
Responsibilities:
- Prepare and cook steaks, chops, seafood, poultry, and other grilled items to specified temperatures and presentation standards.
- Maintain consistent quality, portioning, and plating according to established recipes and culinary standards.
- Properly season, mark, grill, rest, and finish proteins while ensuring accurate doneness.
- Set up, stock, and break down the grill station before and after service.
- Monitor product quality and communicate inventory or quality concerns to culinary leadership.
- Follow all food safety, sanitation, and HACCP procedures.
- Maintain proper holding temperatures and rotate product using FIFO (First In, First Out).
- Ensure grill equipment is clean, maintained, and operating safely.
- Assist with daily prep work as assigned, including butchering, portioning, marinating, and seasoning proteins.
- Work collaboratively with other kitchen stations to ensure timely ticket execution.
- Maintain an organized, clean, and safe workstation throughout each shift.
- Assist with receiving and storing deliveries when needed.
- Support the culinary team during busy service periods while maintaining composure and attention to detail.
- Perform additional duties as assigned by culinary leadership.
Must Haves:
- Minimum 1–2 years of grill or line cook experience, preferably in a high-volume steakhouse, fine dining, or upscale restaurant.
- Experience cooking premium cuts of beef and seafood preferred.
- Strong understanding of meat temperatures and proper cooking techniques.
- Knowledge of food safety and sanitation standards.
- Ability to multitask while maintaining quality and speed.
- Excellent communication and teamwork skills.
- Dependable attendance and punctuality.
- Passion for hospitality and culinary excellence.
