Head Baker -- Ventura Gasca LLC (DBA Tasty Donuts) - Carry out the responsibilities of a Head Baker at a historic doughnut shop. Preserve traditional recipes that originated in 1929. Prepare daily donut production, adapting to varying volumes and special orders depending on needs the next day. Assess and amend weights and measurements of ingredients accordingly. Prepare cake doughnut batter and yeast (raised) doughnut dough meticulously, maintaining consistency in taste and texture. Measure and weigh flour or other ingredients to prepare batters, doughs, fillings, and icings, using industrial sized scales and equipment. Prepare additional pastries for sale at the shop. Adjust oven temperatures and place items into preheated ovens for baking, taking into account the air temperature, humidity, and the time of day to ensure optimal results. Oversee oil temperature for frying raised doughnuts. Efficiently manage the cooling process by placing finished donuts on drying racks. Apply glazes, icings, and other toppings to baked goods. Check equipment to ensure that it meets health and safety regulations, and perform maintenance and cleaning, as necessary. Position requires oversight of assistant bakers. Position does not possess hire/fire responsibility over assistants. Must perform role overnight from approximately 5pm to 2am.
Minimum requirements: Requires five years of pastry baking experience, which must include some experience in the following skills: Doughnut-making; Working with industrial-size mixers, ovens, and scales; and utilizing mathematical calculations to amend ingredient amounts based on required volume.
