Crystal Saloon is a live music venue, bar, and restaurant in downtown Juneau, Alaska. We serve Neapolitan pizza from a Morello Forni oven, pastas, salads, wings, and a growing seafood and entre program. We're looking for a hands-on Head Chef to lead our kitchen, grow the team, and take the food to the next level.
This is a working chef role. You'll be on the line running service, collaborating with the owner on menu development, managing food costs and inventory, and building a crew that can handle high-volume serving both a loyal local crowd and seasonal tourist traffic.
What you'll do:
- Cook on the line and run service daily
- Hire, train, and manage kitchen staff
- Develop menu items in collaboration with the owner
- Manage food costs, inventory, purchasing, and vendor relationships
- Execute in-house catering and full-restaurant buyouts
- Maintain food safety and kitchen standards
What we're looking for:
- 3 5+ years kitchen leadership experience
- Proficiency with the Rational iCombi Pro combi oven
- High-volume experience balancing quality and speed
- Strong food cost and inventory management skills
- Seafood knowledge a strong plus
- Comfort working in a ventless kitchen
- Alaska Food Worker Card (or willingness to obtain)
