Kitchen/Back-of-House Team Leader Job Description

Position Summary

At Chick-fil-A Golf Mill, the Kitchen/Back-of-House Team Leader is responsible for helping lead safe, efficient, accurate, and high-quality kitchen operations during an assigned shift.

This leader supports restaurant management by directing Back-of-House Team Members, maintaining food safety and product-quality standards, overseeing production and station execution, managing workflow, and ensuring that every guest receives fresh, properly prepared food in a timely manner.

The Kitchen Team Leader must be capable of leading with urgency while maintaining accuracy, cleanliness, safety, organization, and respect for the team. This individual is expected to anticipate operational needs, respond effectively to changing business volume, develop Team Members, and maintain strong communication between the kitchen and Front-of-House teams.

Kitchen Team Leaders may be assigned to open or close the restaurant and must follow all established opening, closing, food safety, security, inventory, and equipment procedures.

Primary Responsibilities

Kitchen Shift Leadership

  • Assist restaurant management in overseeing all Back-of-House operations during an assigned shift.
  • Provide clear station assignments, deployment plans, expectations, and production priorities to Kitchen Team Members.
  • Conduct or participate in pre-shift meetings and communicate important goals, product information, safety reminders, and operational priorities.
  • Maintain awareness of restaurant volume, staffing, product levels, equipment readiness, ticket times, and upcoming business needs.
  • Adjust kitchen deployment and production levels based on sales volume and guest demand.
  • Ensure Team Members are positioned according to their training, experience, and the needs of the restaurant.
  • Manage breaks and shift transitions while maintaining appropriate station coverage.
  • Maintain a calm, organized, and solutions-oriented leadership presence during high-volume periods.
  • Lead with urgency without sacrificing food safety, quality, accuracy, cleanliness, or respect.
  • Step into any Back-of-House position as necessary to support the operation.
  • Open or close the kitchen when assigned and complete all required procedures and documentation.
  • Communicate shift results, product concerns, staffing issues, equipment problems, and follow-up needs to restaurant management.

Team Leadership and Development

  • Communicate repeated performance issues, attendance concerns, misconduct, or policy violations to management.

Food Safety and Sanitation

  • Treat food safety as the highest operational priority.
  • Ensure all Team Members follow Chick-fil-A food safety standards and restaurant procedures.
  • Monitor and reinforce proper handwashing and glove-use practices.
  • Verify that raw and cooked products are handled correctly to prevent cross-contamination.
  • Ensure raw chicken handling procedures are followed at all times.
  • Confirm food-contact surfaces, utensils, equipment, and preparation areas are properly cleaned and sanitized.
  • Monitor product temperatures, holding times, cooling procedures, storage practices, and expiration dates.
  • Ensure required temperature checks and food safety logs are completed accurately and on time.
  • Verify that products are properly labeled, dated, rotated, and stored.
  • Enforce first-in, first-out product rotation procedures.
  • Ensure allergen-related orders are handled according to established procedures.
  • Monitor chemical use, storage, labeling, and concentration.
  • Ensure cleaning chemicals are stored separately from food and food-contact items.
  • Immediately stop unsafe practices and correct food safety concerns.
  • Promptly report significant food safety issues to restaurant management.
  • Support preparation for internal inspections, food safety assessments, and regulatory visits.
  • Ensure corrective actions identified through food safety inspections are completed and maintained.
  • Never serve food that does not meet required safety or quality standards.

Food Quality and Recipe Compliance

  • Ensure all products are prepared according to Chick-fil-A recipes, procedures, and quality standards.
  • Verify that Team Members read screens and tickets carefully before preparing orders.
  • Confirm that all special requests and modifications are followed accurately.
  • Ensure Team Members use proper weights, measurements, timers, scoops, utensils, and portion-control procedures.
  • Monitor breading quality, coating, appearance, cook times, oil quality, and product consistency.
  • Verify that chicken products are cooked correctly and meet required internal temperatures.
  • Ensure grilled products are prepared and handled according to established procedures.
  • Monitor fry quality, seasoning, portioning, and holding times.
  • Ensure mac and cheese, soups, breakfast products, salads, and other menu items are prepared according to specifications.
  • Monitor product freshness, appearance, texture, taste, and temperature.
  • Ensure holding cabinets, warmers, refrigeration units, and production equipment are used properly.
  • Prevent expired, overheld, undercooked, overcooked, damaged, or poor-quality products from being served.
  • Correct quality concerns before products leave the kitchen.
  • Communicate recurring quality concerns to management and assist with corrective training.
  • Support consistency across all shifts and kitchen stations.

Kitchen Production and Workflow

  • Monitor restaurant sales volume and adjust production accordingly.
  • Ensure adequate product is prepared to support guest demand without creating unnecessary waste.
  • Coordinate production between breading, machines, fries, primary, secondary, prep, and other kitchen stations.
  • Maintain awareness of product levels and communicate upcoming shortages before they affect service.
  • Ensure Team Members call for products clearly and early enough to avoid outages.
  • Monitor kitchen display screens, ticket volume, wait times, and order priorities.
  • Keep orders moving through the kitchen in the proper sequence.
  • Ensure dine-in, carryout, drive-thru, mobile, delivery, curbside, catering, and special-event orders are prepared accurately.
  • Coordinate large orders and catering production with restaurant leadership.
  • Verify that catering items are prepared, packaged, labeled, and completed on schedule.
  • Maintain appropriate communication with Front-of-House leaders regarding wait times, product shortages, special orders, and operational delays.
  • Anticipate peak periods and prepare the kitchen before volume increases.
  • Ensure stations remain stocked with required food, packaging, utensils, equipment, and supplies.
  • Reduce unnecessary movement and improve station organization and efficiency.
  • Prevent bottlenecks by moving Team Members or providing additional support as needed.
  • Maintain productive kitchen flow during transitions between breakfast and lunch or dinner operations.

Speed of Service and Order Accuracy

  • Maintain Chick-fil-A Golf Mill’s established speed-of-service expectations.
  • Ensure Team Members work with urgency and purpose.
  • Monitor kitchen ticket times and identify the causes of delays.
  • Respond quickly to product shortages, equipment issues, or station breakdowns.
  • Reinforce the importance of preparing orders correctly the first time.
  • Confirm that sandwiches, nuggets, strips, fries, sides, salads, and other products match the order shown on the screen or ticket.
  • Verify special requests, quantities, and modifications before orders leave the kitchen.
  • Communicate realistic wait times to Front-of-House leadership.
  • Balance speed with food safety, product quality, and accuracy.
  • Support recovery efforts when delays or errors occur.
  • Review recurring order-accuracy concerns and provide additional coaching or training.

Inventory, Waste, and Cost Control

  • Help monitor product usage and identify unusual waste, overproduction, or portioning concerns.
  • Ensure Team Members follow approved portion-control standards.
  • Monitor high-cost products and reinforce accurate preparation and handling.
  • Record waste accurately according to restaurant procedures.
  • Never conceal, discard, or fail to report waste.
  • Reduce waste through effective production planning, proper rotation, and appropriate holding levels.
  • Ensure food products are stored safely and protected from damage or contamination.
  • Assist with receiving and organizing deliveries when assigned.
  • Verify that incoming products are handled properly and moved promptly to appropriate storage areas.
  • Help maintain orderly walk-in coolers, freezers, dry-storage areas, and shelving.
  • Participate in inventory counts when assigned.
  • Communicate low-stock products, missing items, damaged cases, or delivery discrepancies to management.
  • Support restaurant food-cost goals by reinforcing recipe compliance and accurate portioning.
  • Protect restaurant supplies and equipment from misuse, loss, or unnecessary damage.

Cleanliness and Organization

  • Maintain a clean, safe, organized, and inspection-ready kitchen.
  • Ensure Team Members follow clean-as-you-go expectations throughout the shift.
  • Monitor floors, drains, walls, ceilings, shelves, equipment, preparation areas, and storage spaces.
  • Ensure raw-product areas are cleaned and sanitized according to required procedures.
  • Maintain clean and organized breading tables, fry stations, grills, machines, preparation stations, and dishwashing areas.
  • Ensure dishes, utensils, containers, and equipment are washed, rinsed, sanitized, air-dried, and stored correctly.
  • Verify that trash, cardboard, grease, and food waste are removed safely and promptly.
  • Ensure walk-in coolers, freezers, dry storage, and chemical-storage areas remain organized.
  • Complete and verify cleaning checklists and closing assignments.
  • Inspect stations before releasing Team Members at the end of their shifts.
  • Ensure nightly cleaning is completed thoroughly rather than rushed.
  • Report pest activity, leaks, damaged equipment, mold, standing water, drainage concerns, or facility issues immediately.
  • Maintain clear walkways and exits and remove safety hazards promptly.

Equipment Operation and Safety

  • Ensure Team Members operate kitchen equipment safely and correctly.
  • Reinforce proper procedures for fryers, pressure cookers, grills, ovens, warmers, refrigeration units, slicers, dish machines, and other equipment.
  • Confirm Team Members are trained and authorized before operating equipment.
  • Ensure required personal protective equipment is used.
  • Monitor hot oil, hot surfaces, sharp objects, steam, and lifting hazards.
  • Stop unsafe behavior immediately.
  • Follow lockout, shutdown, and emergency procedures when applicable.
  • Report equipment malfunctions or damage promptly.
  • Remove unsafe equipment from service when directed.
  • Never attempt unauthorized equipment repairs.
  • Ensure equipment is cleaned according to manufacturer and restaurant procedures.
  • Protect electrical components and equipment from improper chemical or water exposure.
  • Maintain safe lifting, carrying, pushing, and storage practices.
  • Document workplace injuries and incidents according to restaurant procedures.
  • Support emergency response procedures and communicate hazards to the team.

Opening Responsibilities

When assigned to open the kitchen, the Team Leader may be responsible for:

  • Arriving on time and prepared to begin opening duties.
  • Disarming the restaurant and following building-entry procedures when authorized.
  • Inspecting the kitchen for cleanliness, safety, equipment, or security concerns.
  • Turning on and preparing approved kitchen equipment.
  • Verifying refrigeration and freezer temperatures.
  • Preparing stations for operation.
  • Confirming food products, utensils, packaging, and supplies are available.
  • Ensuring breakfast or lunch production begins according to schedule.
  • Assigning opening duties to Team Members.
  • Completing required food safety, temperature, and opening documentation.
  • Reporting overnight issues, delivery concerns, or equipment problems.
  • Ensuring the kitchen is fully prepared before the restaurant begins serving guests.

Closing Responsibilities

When assigned to close the kitchen, the Team Leader may be responsible for:

  • Maintaining food safety, quality, and service standards through the final order.
  • Managing production levels to reduce waste without creating product shortages.
  • Assigning and verifying closing responsibilities.
  • Ensuring all food is properly stored, labeled, cooled, discarded, or carried over according to procedure.
  • Verifying that equipment is cleaned and shut down correctly.
  • Inspecting floors, drains, walls, storage areas, preparation surfaces, and equipment.
  • Ensuring trash, grease, cardboard, and food waste are handled properly.
  • Confirming walk-in coolers, freezers, and storage areas are clean and organized.
  • Completing required waste, food safety, temperature, and closing documentation.
  • Confirming cleaning chemicals are secured and stored correctly.
  • Ensuring doors, equipment, utilities, and security systems are addressed according to restaurant procedures.
  • Communicating unfinished tasks, maintenance needs, product concerns, or follow-up items to management.
  • Releasing Team Members only after their assigned responsibilities have been inspected and approved.

Communication and Cross-Functional Leadership

  • Maintain clear communication with Front-of-House Team Leaders and restaurant management.
  • Provide accurate updates regarding ticket times, product levels, equipment issues, and order delays.
  • Avoid blaming other stations, shifts, or departments when problems occur.
  • Work collaboratively to resolve operational concerns.
  • Participate in leadership meetings, training sessions, and restaurant development activities.
  • Communicate important information during shift transitions.
  • Document concerns and follow-up needs when required.
  • Keep confidential information private.
  • Support a unified restaurant culture rather than an “FOH versus BOH” mindset.

Minimum Qualifications

  • Must be at least 18 years old.
  • High school diploma or GED equivalent required.
  • Previous restaurant or commercial-kitchen experience required.
  • Previous Chick-fil-A or high-volume quick-service restaurant experience preferred.
  • Previous leadership, supervisory, Trainer, or shift-lead experience preferred.
  • Working knowledge of food safety, sanitation, food preparation, and kitchen operations.
  • Ability to work a minimum of approximately 35 hours per week when required for the role.
  • Ability to work opening, closing, evening, Friday, and Saturday shifts based on restaurant needs.
  • Open availability is strongly preferred.
  • Must be able to close multiple shifts per week when assigned.
  • Must be dependable, punctual, honest, and professional.
  • Must be able to work effectively in a high-volume, fast-paced kitchen.
  • Must be able to provide direction, coaching, and accountability to Team Members.
  • Must demonstrate effective verbal communication and problem-solving skills.
  • Must be capable of learning and performing all primary Back-of-House positions.
