About This Position:

***Must have open availability to work between the hours of: 7:00am - 7:00pm (including some weekends and holidays)***

 

***MUST have proven supervisor/lead experience within a kitchen environment***

 

You will prepare a variety of food items following assigned work instructions and menus.

 

This position is located onsite inside of a jail/correctional facility. You will report to the Food Service Director.

 

Essential Functions/Main Responsibilities

• Be a Lead for their respective shift, being responsible for an organized, well-running shift, while ensuring other positions (Cook I / FSW) are completing required tasks
• Prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment
• Refer to Daily Prep List at the start of each shift for assigned tasks and complete opening and closing checklists daily.
• Promptly report equipment and food quality or shortage problems to Assistant Food Service Director/Food Service Manager.
• Know and comply with standard portion sizes, cooking methods, quality standards and kitchen rules, recipes and procedures.
• Follow assigned instruction to maintain levels of food products at line stations to assure smooth serving of food.
• Portions food products before cooking according to standard portion sizes and recipe specifications.
• Complete required production paperwork, while also assigning and supervising inmates in (as provided) in the completion of their required tasks. These could include food prep, serving, clean-up, pots, dishes, sanitation etc. (when applicable)
• Responsible for all aspects of controlling inventory. (when applicable)
• Maintain a clean and sanitary work station area.
• Following assigned recipes, prepares food items for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and marinating according to directions.
• Follow proper plate presentation and garnish set up for all dishes.
• Handle, stores, labels, and rotates all products and in accordance to applicable state laws.
• Other responsibilities as determined by our needs.

What You'll Need:

• High School Diploma or GED and/or equivalent experience. Must be at least 18 years of age.
• At least 5 years experience as a Cook in a full service kitchen.
