We’re a fast-growing and fast-moving company looking to hire a Lead Confectioner to anchor production at our Illinois facility. The Lead Confectioner runs the day-to-day operations of the kitchen — owning the production schedule, leading and developing a team of confectioners, and making sure every batch goes out on time, on spec, and in full compliance with Illinois cannabis regulations.

If you’ve managed a fast-paced kitchen, run shifts at a busy quick-serve restaurant, or led a production line and you’re ready for something with more depth and a bigger ceiling, we’d love to talk.

Day-to-day activities:

  • •Lead daily kitchen operations — set the pace, run the line, and keep the team focused and moving.
  • •Build and execute the production schedule to hit weekly and monthly output targets.
  • •Train, coach, and develop the confectioner team; set clear expectations and hold the line on quality and consistency.
  • •Own batch accuracy: verify recipes, dosage calculations, and homogenization on every run.
  • •Draft, refine, and enforce SOPs for infusion, depositing, packaging, and sanitation.
  • •Track and report key production metrics (yield, throughput, waste, rework) and use them to improve performance.
  • •Manage ingredient and supply levels; flag shortages before they hit the schedule.
  • •Keep accurate and legible production logs and METRC entries.
  • •Troubleshoot minor equipment issues and coordinate maintenance.
  • •Maintain a clean, organized, safe, and compliant workspace at all times.
  • •Partner with operations, compliance, and sales on new product launches and recipe development.
  • •Other duties as assigned.
  • •3+ years of experience in kitchen operations, food production, or process management — with at least 1 year leading a team or running shifts.
  • •Proven ability to manage people in a fast-paced, deadline-driven environment (quick-serve restaurant shift managers, production leads, and sous chefs encouraged to apply).
  • •Strong organizational skills and the ability to juggle scheduling, training, inventory, and quality at the same time.
  • •Solid math skills — comfortable with recipe scaling, dosage calculations, and yield tracking.
  • •Clear, direct communication style with coworkers, direct reports, and supervisors.
  • •Detail oriented and able to follow and enforce meticulous instructions.
  • •High school diploma or GED required; associate degree, 2-year culinary, or equivalent leadership training preferred.
  • •Cannabis industry experience a plus, but not required — we’ll train the right leader.
  • •Ability to work 40+ hours per week, on your feet for an 8-hour shift.
  • •Reliable transportation.
  • •Ability to lift or carry up to 50 lbs.
  • •Must be 21 or older.
  • •Must pass a background check and obtain an Illinois cannabis agent ID card per IDFPR/IDOA requirements.
  • •Positive attitude and the ability to work well with others.
