Description

Portway Tavern, a Union Town Historic Landmark with a century of serving good food and spirits within its walls is looking for new crew members to continue the traditions and help escort it into the next 100 years. Acquired by new owners in early 2023, we ve been busy making some necessary improvements to the facilities (new kitchen refrigeration, cooking appliances, remodeling updates and more) while maintaining what makes this local haunt so special. We ve got a lot more work ahead of us and some exciting expansion plans cooking up too! We can t wait for you to come aboard!

Line Cook

The skinny

  • Pay range $18-$22 hr base + ~$8-$12 per hr in tip share.
  • Part-time, flexible schedule, (24 hrs per week min, 38 hrs max)
  • 2+ years of equivalent work experience is preferred.
  • Experience with Tavern establishments that turn out high order volume a plus.
  • Ability to lead operations, maintain facilities and adhere to all health code requirements.
  • Valid OR food handlers card.
  • Must be 21 years old or older.

You re a seasoned and passionate Culinary Craftsman that makes Steven Segal look like he's lost his cool in kitchen combat. On this voyage, you ll get the chance to add some seasoning to your saucy street cred supporting the management team with new marketing efforts, menu additions, and exciting new business growth initiatives. In the day to day, you'll ensure our operations are flowing smoothly and define and participate in the preparation, seasoning, and cooking of soups, fish, meats, sauces, salads etc, while also getting hands on with the line to serve up quality Tavern dishes. Most importantly, you ll bring a strong work ethic to our team and attention to detail to ensure consistency and quality applies to every dish served. A knowledge of various cooking techniques, knife skills and a passion for the culinary craft just adds to your list of Saucy Sorcerer abilities. Ultimately, you ll demonstrate excellent communication, time management skills, and multi-tasking abilities to get the job done while taking pride in maintaining a clean and organized workspace.

Expectations

  • Assist management with the preparation and planning of meal designs by developing new menu options based on seasonal changes and customer demand.
  • Ensure that kitchen activities operate in a timely manner.
  • Monitor and record inventory, and when necessary, order new supplies.
  • Provide support to junior kitchen employees with various tasks including line cooking, food preparation, and dish plating.
  • Preparing simple components of each dish on the menu by chopping vegetables, cutting meat, and preparing sauces.
  • Cooking menu items utilizing all stations and equipment with and without the support of BOH staff.
  • Making sure food preparation and storage areas meet health and safety standards.
  • Ensuring the preparation station and the kitchen are set up and stocked.
  • Cleaning prep areas, cooking equipment and taking care of leftovers.
  • Reporting to the manager/owner and following direction.

Qualifications

  • High school diploma or equivalent qualification.
  • Certificate in culinary arts or related field a plus.
  • 4+ years of equivalent work experience is preferred.
  • In-depth knowledge of restaurant best practices and cooking methods.
  • Excellent communication and organizational skills.
  • Aptitude for multi-tasking.
  • Must be able to work cooperatively and efficiently in a team.
