Position Summary

The Fine Dining Line Cook is responsible for executing refined cuisine with exceptional precision, consistency, and attention to detail. This position requires advanced culinary skills, a passion for excellence, and the ability to perform under pressure while maintaining the highest standards of quality, cleanliness, and professionalism.

Every plate leaving the kitchen represents the reputation of the restaurant. Excellence is expected on every service.

Essential Responsibilities
  • Prepare and execute menu items to exact specifications.
  • Maintain impeccable plating and presentation standards.
  • Execute la minute cooking using proper culinary techniques.
  • Demonstrate proficiency in grilling, roasting, saut ing, braising, poaching, confit, and sous vide preparation where applicable.
  • Prepare sauces, reductions, emulsions, and stocks according to established recipes.
  • Fabricate meats, seafood, and vegetables with precision.
  • Maintain strict portion control and minimize waste.
  • Ensure consistency of every dish regardless of service volume.
  • Taste and season food throughout preparation.
  • Maintain complete mise en place before every service.
  • Monitor product quality continuously.
  • Maintain an immaculate workstation throughout the shift.
  • Follow HACCP food safety procedures.
  • Communicate professionally with chefs and other kitchen staff.
  • Assist with menu development and daily specials when requested.
  • Train junior cooks when assigned.
  • Participate in inventory and quality control.
  • Maintain equipment in excellent working condition.
Qualifications
  • 3 5 years experience in upscale or fine dining kitchens.
  • Strong knife skills.
  • Thorough understanding of classical cooking techniques.
  • Experience with premium proteins and seafood.
  • Knowledge of sauces, emulsions, reductions, and refined plating.
  • Ability to work calmly under pressure.
  • Excellent organizational skills.
  • Ability to memorize detailed recipes and plating guides.
  • Food Safety Certification required or obtainable upon hire.
