Jekyll & Hyde is seeking an experienced and dependable Line Cook to join the culinary team at Hyde, our underground USDA Prime steakhouse. The ideal candidate must have previous steakhouse kitchen experience and a strong understanding of steak preparation, cooking temperatures, timing, seasoning, and presentation.
Experience operating an upright charbroiler is a strong plus. The successful candidate must be able to maintain consistency, accuracy, cleanliness, and composure during high-volume service.
Key Responsibilities
- Prepare and cook USDA Prime steaks, seafood, proteins, vegetables, sauces, and side dishes according to established recipes and standards.
- Cook steaks accurately to requested temperatures, including rare, medium-rare, medium, medium-well, and well-done.
- Properly season, sear, grill, broil, rest, slice, and present steaks and other proteins.
- Operate grills, broilers, sauté stations, ovens, fryers, and other commercial kitchen equipment safely.
- Operate an upright charbroiler when assigned and properly manage heat, cooking zones, and product placement.
- Set up and stock the assigned station with all required ingredients, tools, and supplies before service.
- Read and execute kitchen tickets accurately while maintaining proper timing and course coordination.
- Coordinate with the Executive Chef, Sous Chef, Expo, and other Line Cooks to ensure complete orders are prepared together.
- Follow recipes, portion standards, plating instructions, and presentation requirements consistently.
- Inspect ingredients for quality, freshness, and proper storage before use.
- Properly label, date, rotate, and store food according to FIFO procedures.
- Monitor product levels and communicate low-stock or preparation needs to kitchen leadership.
- Minimize waste by following portion-control, preparation, and storage standards.
- Maintain a clean, sanitized, safe, and organized workstation throughout the shift.
- Prevent cross-contamination and follow all allergy and dietary-restriction procedures.
- Clean and maintain cooking equipment, work surfaces, refrigeration units, and surrounding areas.
- Assist with receiving, inspecting, and properly storing food deliveries when needed.
- Complete assigned preparation, opening, shift-change, and closing duties.
- Follow all company policies, food-safety standards, and workplace-safety procedures.
- Support other kitchen stations and team members as directed by culinary leadership.
Qualifications
- Previous Line Cook experience in a steakhouse is required.
- Strong knowledge of steak cuts, cooking temperatures, seasoning, resting, and presentation.
- Experience operating an upright charbroiler is a strong plus.
- Fine-dining or upscale restaurant kitchen experience is preferred.
- Experience preparing premium steaks, seafood, sauces, and composed entrées is preferred.
- Ability to execute multiple tickets accurately during fast-paced service.
- Strong knife skills and knowledge of professional kitchen equipment.
- Understanding of food safety, sanitation, temperature control, and cross-contamination prevention.
- Ability to follow recipes, instructions, and plating standards consistently.
- Strong communication, organization, urgency, and teamwork skills.
- Ability to remain calm, focused, and productive under pressure.
- Dependable, punctual, and prepared to work the scheduled shift.
- Availability to work evenings, weekends, holidays, and special events as scheduled.
- Food-handler certification may be required under local regulations.
