Essential Job Responsibilities and Duties:

  • Lead all daily operations of the assigned outlet(s), ensuring consistent execution of corporate service culture and operational standards
  • Own full P&L responsibility, including revenue generation, labor management, cost controls, and financial forecasting
  • Develop, coach, and hold accountable the outlet management team, building strong succession plans and leadership bench strength
  • Collaborate with casino, marketing, and property leadership to support promotions, events, and guest engagement strategies
  • Ensure compliance with food safety, alcohol service, labor laws, and all company policies and procedures
  • Lead inspection readiness efforts and oversee corrective action planning and follow-through
  • Achievement of profitability, budget, and KPI targets
  • Positive guest satisfaction and service trend results
  • Strong leadership pipeline and retention of key talent
  • Consistent compliance and audit readiness
  • Proven leadership experience in high-volume food and beverage operations
  • Strong financial, analytical, and business acumen
  • Demonstrated ability to lead teams, manage performance, and develop talent
  • Excellent communication and cross-functional collaboration skills
  • Full outlet food and alcohol safety accountability
  • Final on-site authority during inspections
  • Oversight of front-of-house and back-of-house food safety programs
  • Cross-department coordination to ensure compliance and risk mitigation
  • Inspection readiness, corrective planning, and policy enforcement
  • Other related duties including but not limited to complying with the following: Colorado Limited Gaming Act, Colorado Gaming Rules and Regulations, Colorado Internal Control Minimum Procedures, Colorado Liquor and Beer Codes, Federal requirements for Anti-Money Laundering, Company Policies, and IRS reporting

Skills, Education and Other Requirements:

  • Proven leadership experience in high-volume food and beverage operations
  • Strong financial, analytical, and business acumen
  • Demonstrated ability to lead teams, manage performance, and develop talent
  • Excellent communication and cross-functional collaboration skills
  • Must be fluent in English
  • Must be able to read, interpret and analyze a financial and/or legal document
  • Must have strong communication skills
  • Must possess intermediate mathematical reasoning.
  • Must have basic knowledge of computer applications (Windows, Word, Excel)
  • Business, food service graduate or equivalent work experience
  • Knowledge of food and liquor
  • 3+ years experience in a high volume restaurant management
  • 3+ years previous senior level management experience
  • Responsible Alcohol Training Certification
  • Food Safety Manager Certification
  • Identification that establishes identity
  • Identification that establishes the right to work in the United States
