A high volume, upscale, neighborhood pizzeria in East Los Angeles seeks a seasoned culinary leader with a passion for and experience with Italian cuisine. Dedication to great ingredients, authentic Cal/Italian flavors, and passion or interest in pizza making is a must. This is a role for an experienced chef in high volume upscale Italian restaurants/pizzerias. Candidates should be comfortable and excited by working in a fast-paced, high energy environment - ideally because they possess the confidence from having been there before.
The chef will manage:
Financial performance: food cost, BOH Labor, Net operating income
Team Culture: Hiring, training, management and development of culinary team
Health Department Rating: Maintain A level
Kitchen Leadership: Food Quality & Culinary Standards, Financial & Inventory Management, BOH Team Leadership & Development
High Volume leadership: Lead and execute high-volume of orders (both in house, to go, and catering) with limited space to store/produce them.
Equipment, Repairs and Maintenance oversight and scheduling
Communication & Company Leadership: Serve as a member of the leadership team and participate actively in management meetings, planning, budgeting, and restaurant initiatives.
Continuous Improvement & Growth: Oversee and execute the BOH components of new and growing business initiatives, increased catering and private events, and future initiatives developed by the company. This includes planning for staffing, menu development and execution, production, food cost, kitchen systems, and operational readiness necessary for successful implementation Bring forward ideas that can increase revenue, improve the menu, reduce unnecessary expenses, improve employee retention, or strengthen the guest experience.
Ownership Mentality: Approach problems with urgency and ownership, implementing solutions and following through to ensure they are effective.
Requirements:
2-5 years of CDC or Executive Chef experience in upscale, high volume full service Italian restaurants
Passion for ingredients--especially pizza dough and great bread
Strong financial acumen
Organized. Experience in a small kitchen is a plus
Adaptive: When issues come up, they should be quick to develop and implement new systems that alleviate any stresses on the staff or customers and should also be consistently re-visualizing the space/kitchen in order to organize and improve the flow of production and service.
The ideal candidate should be comfortable working collaboratively with other managers, assistant managers and employees
