Supervisory CookJob Purpose:A professional Supvervisory Cook is to lead our kitchens at fire camps locations across the country to feed firefighters during fire season. This position follows the Mobile Food Service Managers specifications and guidelines. A successful candidate will employ their culinary and managerial skills in order to play a critical role in maintaining and enhancing our customer's satisfaction. The Fire Camp Supervisory Cook is to be a team leader and provide organizational guidance in the kitchen. Must be able to work in all types of extreme weather conditions. Must be able to serve and organize preparation and service of food for large numbers. Must have all necessary certifications up to date. Duties include but are not limited to:Supervisory Cook at Fire CampEnsure all kitchens, salad bar, and beverage trailer are set up properly upon arrival at fire camp and torn down properly prior to departure from fireLead by example: Lead the kitchen team to enforce compliance of Government ContractBe familiar with current government contract specifications for each job.Ensure all employees are following proper health and sanitation practicesSupervise Kitchen Staff, work with the MFSU Manager to coordinate employees and set schedulesMaintain kitchen cleanliness and organizationSetup menus with Kitchen Manager and MFSU ManagerCommunicate necessary menu changes with MFSU Manager promptlyEnsure MFSU equipment is cleaned, organized and dispatch ready prior to fire season and at fire campCook according to agreed upon menus and standardsReport to Kitchen Manager any kitchen equipment that is not workingQuality Control of product to be maintained at all times Skills/QualificationsProven food service cooking and leadership experienceHigh degree of accuracy and attention to detailAbility to work as part of a teamMaintain a positive and professional approach with coworkers and customersBe highly organized with the ability to follow a daily routineTrustworthyPrevious experience with government contracts preferredAdaptability: this job takes place on-site, often in remote locations with little noticeProblem solverAbility to lift up to 50 pounds regularly Required CertificationsServeSafe: Food Manager Certification SGI Global provides equal employment opportunities (EEO) to all employees and applicants for employment without regard to race, color, religion, gender, sexual orientation, gender identity or expression, national origin, age, disability, genetic information, marital status, amnesty, or status as a covered veteran in accordance with applicable federal, state and local laws.
