  1. KEY RESPONSIBILITIES

Essential Duties and Responsibilities

  • Supervises and participates in the preparation of all cakes, cookies, chocolates, ice creams, desserts and other sweets items prepared in the Pastry and the Bakery.

  • Responsible for checking desserts set to all outlets for standard and quality.

  • Responsible for quality, quantity and outside orders of pastry shop.

  • Responsible for setting-up the Banquet sweets buffet and all other buffets including breakfast and coffee break.

  • Checks the pastry mise-en-place in all the outlets.

  • Checks the quality and quantity of pastry, croissants and bread buffet.

  • Checks the daily function sheets and prepares the appropriate production level.

  • Designs and prepares show pieces and other decorations in sugar and chocolate for special occasions.

  • Sees that all desserts are prepared in an attractive and appetizing manner.

  • Trains and controls the bakers for the quality and quantity of all types of bread.

  • Keeps and updated standard recipe file for all pastry and bakery products.

  • Checks and controls pastry items before they are received by the store, making sure that they are within quality and quantity.

  • Maintains daily production lists according to daily forecasts.

  • Controls and approves time schedules of the Pastry and Bakery sections.

  • Minimizes leftovers and spoilage.

  • Ensures the proper handling, cleanliness and maintenance of working areas, marbles, ice cream machines, chocolate room, cold room, according to applicable sanitation and safety procedures.

  • Demonstrates understanding and awareness of all company policies and procedures relating to Health, Hygiene and Fire Life Safety.

  1. REQUIRED QUALIFICATIONS

Education:

Bachelor Degree

HAACP Certificate
