Pizza Operations Lead / Head of Kitchen

Gentle Giant is a beloved neighborhood brewery and gathering place in Pearl River, NY (Rockland County). We already have a loyal following for our craft beer and current food offering. Now we want to level up hard.

This is a chance for someone with real experience in New York and Neapolitan-style pizza to step up, take full ownership, and build something excellent. You ll lead the pizza program (including focaccia and Roman-style options in the spirit of places like Biga in NYC) while also creating a strong supporting pub menu of great burgers, wings, exceptional salads, and sandwiches.

Pizza will be the star. The rest of the menu will make the whole experience unforgettable. You ll have the freedom and responsibility to shape the food, build the team, and raise the standard.

• Design, refine, and execute a standout pizza program focused on New York/Neapolitan styles, with strong focaccia and Roman/al taglio options
  
• Create and maintain a high-quality pub menu featuring great burgers, wings, exceptional salads, and sandwiches
  
• Take complete ownership of dough, prep, quality, consistency, and service standards across the full menu
  
• Build, train, and lead a high-performing kitchen team
  
• Establish systems for prep, production, inventory, and quality control that scale with volume
  
• Work closely with ownership on menu development, costing, and continuous improvement
  
• Help create a kitchen culture that is serious about craft but still fun and collaborative
  

• Solid, hands-on experience with New York-style and/or authentic Neapolitan pizza (excellent dough work is non-negotiable)
  
• Ability (or strong interest) in focaccia and Roman-style (biga-based) pizza
  
• Experience contributing to or running a broader pub-style menu
  
• Someone with the right foundation who s ready to step into full ownership and take their skills to the next level
  
• Leadership potential you can hire, train, schedule, and inspire a team
  
• High standards, strong work ethic, and the drive to make this a destination
  
• Comfortable working 50 60+ hours per week in a busy brewery environment
  

• $75,000 base salary
