The Porter – Beverage is responsible for the deep cleaning and sanitation of the bar areas to ensure a clean, organized, and clutter-free environment. This position plays a key role in maintaining the cleanliness and presentation of the department in accordance with 4-Diamond standards, supporting both guest satisfaction and health and safety protocols.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
- Performs deep cleaning and sanitation of bar stations, beverage counters, equipment, and floors.
- Cleans and sanitizes hoods, filters, light fixtures, exhaust vents, floor drains, and ice storage areas.
- Washes, scrubs, and disinfects floor mats, shelves, countertops, and walls.
- Sweeps and mops floors regularly to maintain safe, dry, and clean walking surfaces.
- Uses appropriate cleaning agents and follows safety protocols when handling chemicals.
- Assists in maintaining an organized and safe working environment.
- Supports bartenders and beverage team members by ensuring workstations are clean and stocked as needed.
- Verifies guest identification to ensure compliance with alcohol service laws and adheres to all ABC regulations, RBS training standards, and internal policies.
- Performs other job-related duties as assigned.
SUPERVISORY RESPONSIBILITIES:
This position does not have direct supervisory responsibilities but may provide guidance or support to other team members.
QUALIFICATIONS:
- Ability to follow detailed cleaning procedures using proper chemicals and tools.
- Must be able to communicate clearly and respectfully with guests and team members.
- Strong work ethic and ability to multitask in a fast-paced, team-oriented environment.
- High regard for cleanliness and sanitation standards.
EDUCATION and/or EXPERIENCE:
- Bachelor’s degree in Hospitality Management, Business Administration, or a related field required.
- Additional certifications in beverage management, mixology, or responsible alcohol service are a plus.
- Minimum of 5–7 years of progressive experience in beverage operations, including at least 2–3 years in a supervisory or management role.
- Proven expertise in bar operations, inventory control, staffing, and guest service standards.
- Strong knowledge of beverage products, mixology, and compliance with health and safety regulations.
- Experience in developing staff training programs and driving service excellence.
- Proficient in budgeting, scheduling, and using POS and inventory management systems.
- Prior experience in a casino, resort, or high-volume hospitality environment is strongly preferred.
LICENSES, CERTIFICATES, REGISTRATIONS:
Must have successfully completed a background check and obtained a gaming license issued by the Morongo Gaming Agency, as required.
LANGUAGE SKILLS:
Must be able to read and interpret documents in English, such as instructions, guidelines, policies, and procedures. Must also be able to communicate clearly and effectively with team members, management, and guests.

- Lifting and Carrying: Frequently lifts and carries beverage cases, kegs, boxes, glassware racks, and cleaning supplies weighing up to 75 pounds; regular team lifting may be required for heavier items.
- Manual Dexterity: Regularly uses hands and fingers to operate cleaning tools, stock supplies, change kegs, and manage storage organization with precision and safety.
- Mobility: Continuously moves throughout bars, storage areas, kitchens, and service corridors; requires walking, standing, bending, lifting, pushing, and reaching for extended periods throughout the shift.
- Stationary Work: Rarely remains seated; this position requires near-constant movement while performing duties related to stocking, cleaning, and equipment support.
- Tool Operation: Frequent use of carts, dollies, mop buckets, brooms, cleaning chemicals, keg taps, and standard bar support tools.
- Visual Acuity: Requires near vision to inspect cleanliness, restock supplies accurately, and read labels or inventory sheets; far vision needed to navigate service areas and ensure bar readiness.
- Working Conditions: Routinely works in bar, lounge, and back-of-house environments with exposure to wet floors, cleaning chemicals, tight spaces, and loud noise levels. Regular exposure to a smoking environment while transitioning through casino or public spaces.
WORK ENVIRONMENT:
This is a dynamic, fast-paced environment that requires the ability to adapt and perform under pressure. The casino operates with moderate to loud noise levels and is a smoking environment, requiring team members to work comfortably in these conditions.
WORKING HOURS:
Morongo Casino Resort & Spa operates 24 hours a day, 365 days a year; therefore, flexibility in scheduling is essential. Team members must be available to work shifts that may include evenings, weekends, holidays, and special events. Schedules are subject to change based on business needs and may include overtime, as well as work on both weekdays and weekends.
