    Job Title:         Prep Cook

    Location:         Brewpub – 91 Biltmore Ave, Asheville, NC  28801

    Reports To:     Executive Chef - Pub

    Supervisory Responsibilities:  This job has no direct supervisory responsibilities.

    As an important member of the Wicked Weed Brewing team, the Prep Cook is responsible for opening the kitchen, putting out daily orders, ensuring daily prep, product rotation and food safety and quality standards are kept at all times.

    Essential Duties and Responsibilities:

    • Opening the kitchen
    • Checking in and putting away daily orders
    • Ensuring proper product rotation
    • Ensuring any ordering or shipping errors are communicated to kitchen management
    • Ensuring quality of product through all steps of receiving and preparation
    • Writing daily prep lists and establishing appropriate prep par levels
    • Responsible for completion of daily prep/mise en place; meeting quality standards
    • Completing temp logs
    • Upholding food safety standards at all times
    • Maintaining a clean and safe workspace, including prep area and storage areas

    Additional duties may be assigned as necessary.

    Education and/or Experience:

    Previous experience in a restaurant setting

    Work Environment:

    • Rapid changing flow of business
    • That of a busy brewpub dining area and full-service kitchen.
    • Early mornings. Workday ends when all prep responsibilities are complete.
    • Fast-paced
    • The employee frequently must work in an environment with a moderate to high noise level.

    Physical Demands:

    • Ability to be on your feet for long periods of time standing and/or walking.  Walking surfaces may be wet and/or slippery.
    • Ability to frequently sit, stoop, kneel, crouch.
    • Ability to frequently talk, hear, and smell.
    • Ability to lift and/or move up to 35 lbs. safely and with proper body mechanics and occasionally life and/or move up to 55 lbs.
    • Ability to frequently reach with hands and arms; use hands to finger, handle or feel objects, tools, or controls.
    • Vision abilities required by this job include close vision, distance vision and the ability to adjust focus.
    • Ability to work effectively in a kitchen environment with fluctuations in temperature and conditions (heat, cold, humidity) for an extended period of time.
