Perfect 85 Degrees C Inc seeks a full-time Production Chef to work at its office in Brea, CA. Candidate must have at least a High School/GED diploma, with 36 months of prior experience as Chef or Cake Chef or Bread Chef or Pastry cook or Baker or Bakery Chef.
Candidate duties will include:
Manage large-scale production of breads, cakes, and pastries to hit throughput, yield, and consistency targets.
Develop, test, and standardize new cake and bread recipes; run pilot batches and finalize SOPs.
Plan and execute production schedules, adjusting staffing, equipment, and materials in real time to meet order deadlines.
Supervise and coach pastry cooks and kitchen staff; lead trainings on techniques, equipment operation, and safety. Implement a QA program with in-process and finished-goods checks; document results, investigate nonconformities, and drive corrective actions.
Enforce sanitation and food-safety compliance and workplace safety requirements.
Track KPIs (e.g., yield, waste, defects, on-time rate) and coordinate inventory for key ingredients to support schedule adherence.
Candidate must have 12 months of work experience in quality control for pastry/bakery production.
Salary: $82264–$90000/yr.
