F ve (French for bean ) is a four-time Good Food Award -winning artisan chocolate company that has been a leader in confection flavor and technique in San Francisco for over 19 years. We produce the highest-quality, hand-made truffles, caramels and chocolate covered confections in small batches, using fair-trade chocolate and pure ingredients. We also leverage cutting-edge technology and automation to produce modern and traditional confections. We focus on creating incredible textures, bold flavors, and exciting custom appearances for our customers which include some of the top hotels, specialty stores, wineries, restaurants, and national grocery chains in the nation. Hourly Rate: $28.00 to $31.00 per hour, plus annual profit sharing!

Production Manager:

At Feve, our Production Manager oversees the production of our truffles, caramels, panned items and confections. This individual is responsible for organizing and planning the company s production flow and daily manufacturing processes. Our Production Manager presides over quality control, cleanliness and sanitation of the production facility, SQF-level food safety procedures and processes, and organization of production against dynamic order demands to meet our customer s needs on time with the highest-quality product. You must be a good communicator, and especially disciplined and focused. Organizational skills are a must. The Production Manager will report to the General Manager as well as the President & CEO of Feve. At Feve, our employees are very valuable and we strive to create a working environment that is both focused and disciplined, as well as enjoyable. This is a full-time position with a normal work day from 9:00am to 5:30pm. However, during our busy holiday and seasonal periods, you may be required to come in earlier or work occasional weekends to keep up with demand. However, most of the time you will have your evenings and weekends free. We are seeking enthusiastic candidates with deep culinary experience wanting to lead the craft of artisan chocolate-making who will commit to a minimum two year engagement with Feve. Responsibilities:

Oversees production of the complete range of Feve products, including production of fillings, ganaches, chocolate shells, bars, toffees, panned dragee products, and both enrobed and molded confections while ensuring that all products are made according to Feve best-in-class standards in a timely focused manner.

Supervises the picking, packing, and organizing of Feve products to be shipped on a timely basis to wholesale, retail and co-packing clients using a high level of attention to detail and disciplined focus. Trains chocolatiers and packers on inspection protocols, quality control, and proper boxing and cartooning of Feve products in accordance with SQF food safety standards.

Manages execution of time-sensitive production against deadlines, possessing the flexibility required to change and adapt production as customer needs change. Must be experienced managing competing priorities in a fast-paced environment.

Working with the company's Chocolatiers, manages the team's production flow with packing requirements, shelf life management, and near-term order fulfilment and shipping deadlines.

Checks in and inspects raw materials and ingredients from vendors, including recording ingredient traceability and expiration dates.

Actively participates on the Company's Food Safety Team, leading initiatives to ensure compliance with SQF Fundamentals Intermediate Level standards and supporting the documentation and verification of our food safety protocols and preventative controls. Provides primary support and management in the absence of key food safety personnel.

Uses our Point-of-Sale system to manage retail sales in our factory storefront.

Independent problem solving skills are very important, must think like an owner.

Uses knowledge of HACCP and food safety management to execute Good Manufacturing Practices and maintain a clean, well-organized work environment.

Helps out wherever needed and pitches in with other members of the Feve team. Must be able to focus like a laser on projects or tasks. Be able to proactively see the business needs and fulfill them without being asked.

Understands basic math and computer operating techniques. Provides positive input and ideas to new products and recipes

Required Qualifications:

Focus, positive attitude and a desire to learn very high-end artisanal chocolate-making and support whatever is required to help the company grow; Ideally, have some knowledge of working with chocolate including its chemistry and tempering techniques or express a strong interest and aptitude in learning the same.

Must have 5 or more years of culinary production experience in either chocolate/candy confection-making, baking, pastry, or related field.

Attention to detail, organizational skills, and an above-average ability to multitask with a sense of urgency; ability to do basic math including scaling recipes as appropriate for changing yields

Clear and frequent communicator, ability to work with people of various personalities

Ability to perform repetitive tasks, stand for 8 hours, move quickly and lift heavy objects up to and including 40 pounds.

Must be fluent in English and able to work in the U.S. legally

Desired Knowledge and Skills:

Experience with artisan chocolate making, tempering, making ganaches, caramels, pralines, or equivalent in baking or pastry work.

Ability to pan (chocolate coat) various centers and understand the science and art that goes into panning and basic confectionery-making.

Motivation to develop new procedures, recipes and improve work flow productivity

ServSafe food certification helpful but not required
