Cutting, trimming, grinding, and chopping various cuts of meat (pork, beef, or poultry. Accurately weighing and blending meat with spices, seasonings, and ice/water according to specific recipes. Operating industrial stuffers to fill natural or synthetic casings, then tying or linking them to the correct size. Hanging sausages on racks (smoke trucks) for transport to smokehouses, ovens, or curing rooms. Proficiency with grinders, industrial mixers, stuffers, and linking machinery. Disassemble complex food processing machinerysuch as industrial grinders, mixers, and sausage stuffersto clean internal parts where meat debris can hide. Handle and mix industrial cleaning agents according to safety guidelines (SDS) and proper dilution ratios. Reassemble machinery after cleaning, ensuring it is ready for the next production shift to start on time.
