Prepare various types of whole raw fish and other seafood such as octopus, eel, squid, sea urchin, shrimp, clam and crab for sushi and sashimi. Scale, debone, clean and filet whole fish in preparation for sushi and sashimi. Examine incoming seafood and determine whether fish and seafood are healthy, edible, and that no parasites exist. Create various sauces, including warisu for sushi rice, eel sauce, ponzu sauce, tempura sauce and katsu sauce. Prepare and slice vegetables, seaweed and seasoning for sushi and sashimi.
**Split shift
Monday through Friday
11:00 AM to1:00 PM 4:30 PM to 9:00 PM
Saturday
11:00 AM to 1:30 PM 4:30 PM to 9:30PM
