The Server – Cielo is responsible for providing exceptional food and beverage service in a refined, fine dining environment. This role ensures each guest receives prompt, courteous, and knowledgeable service while maintaining the highest standards of hospitality and presentation. The Server coordinates closely with kitchen and support staff to ensure a seamless and memorable dining experience.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
- Greets guests professionally, presents menus, and takes accurate food and beverage orders.
- Utilizes proper serving techniques and provides detailed menu knowledge to guide guest selections.
- Ensures timely service by coordinating with kitchen staff and fellow front-of-house team members.
- Practices responsible alcohol service in accordance RBS training and internal policies.
- Busses and resets tables as needed to support smooth dining room flow.
- Maintains cleanliness and organization of assigned workstations and service areas throughout the shift.
- Prepares service-related items such as condiments, coffee, and side accompaniments.
- Presents, delivers, and collects guest checks using appropriate procedures.
- Follows all food safety, sanitation, and hygiene protocols.
- Provides an elevated level of guest service that aligns with Cielo’s fine dining standards.
- Verifies guest identification to ensure compliance with alcohol service laws and adheres to all ABC regulations, RBS training standards, and internal policies.
- Performs other job-related duties as assigned.
SUPERVISORY RESPONSIBILITIES:
This position does not have direct supervisory responsibilities but may provide guidance or support to other team members.
QUALIFICATIONS:
- Excellent verbal communication skills and a professional, courteous demeanor.
- Ability to multitask and remain composed in a fast-paced, high-end dining environment.
- High regard for guest service and the ability to resolve concerns diplomatically.
- Strong understanding of food and beverage service standards and etiquette.
EDUCATION and/or EXPERIENCE:
- High school diploma or equivalent preferred.
- Additional coursework in hospitality or food and beverage service is a plus.
- Food Handler Certification required or must be obtained upon hire.
- Minimum of 2–3 years of serving experience in a fine dining or upscale restaurant environment.
- Strong knowledge of food and beverage pairings, menu presentation, and upscale service etiquette.
- Proven ability to provide exceptional guest service in a fast-paced, detail-oriented setting.
- Experience using POS systems, handling cash and credit transactions, and managing guest checks.
- Excellent communication, multitasking, and time management skills.
- Prior experience in a resort, casino, or luxury dining venue is preferred.
LICENSES, CERTIFICATES, REGISTRATIONS:
Must have successfully completed a background check and obtained a gaming license issued by the Morongo Gaming Agency, as required.
LANGUAGE SKILLS:
Must be able to read and interpret documents in English, such as instructions, guidelines, policies, and procedures. Must also be able to communicate clearly and effectively with team members, management, and guests.

- Mobility: Continuously moves throughout the dining room and service areas; requires walking, standing, bending, reaching, and maneuvering in tight spaces during extended shifts.
- Stationary Work: Rarely stationary; must remain in motion to attend to multiple tables, communicate with kitchen staff, and respond promptly to guest needs.
- Tool Operation: Regular use of trays, POS terminals, beverage service tools, and table-setting implements.
- Visual Acuity: Requires close and distance vision to read order tickets, observe guest cues, verify plate presentation, and maintain awareness of the dining floor.
- Working Conditions: Routinely works in a fast-paced, upscale restaurant with exposure to noise, kitchen heat, and food and beverage handling; regular exposure to a smoking environment while transitioning through casino or guest areas.
WORK ENVIRONMENT:
This is a dynamic, fast-paced environment that requires the ability to adapt and perform under pressure. The casino operates with moderate to loud noise levels and is a smoking environment, requiring team members to work comfortably in these conditions.
WORKING HOURS:
Morongo Casino Resort & Spa operates 24 hours a day, 365 days a year; therefore, flexibility in scheduling is essential. Team members must be available to work shifts that may include evenings, weekends, holidays, and special events. Schedules are subject to change based on business needs and may include overtime, as well as work on both weekdays and weekends.
