Sous Chef Bottega Salaria | Fredericksburg, TX

We are a concept-driven, authentic Italian restaurant in Fredericksburg, TX seeking a Sous Chef to support the leadership of our kitchen with consistency, discipline, and pride.

This role is ideal for a chef who values structure, teamwork, and execution, and who takes ownership of their station and the overall flow of service. Our concept is rooted in Italian tradition, hospitality, and quality ingredients.

The right candidate will be a strong second-in-command someone who leads by example, communicates clearly, and helps maintain a calm, organized kitchen.

Responsibilities

  • Support and lead BOH operations during service
  • Execute an established Italian menu with consistency and attention to detail
  • Assist in training, coaching, and developing kitchen staff
  • Manage prep lists, pars, and daily organization of the kitchen
  • Step into a leadership role in the absence of the Head Chef
  • Maintain cleanliness, food safety, and proper kitchen standards
  • Help uphold a positive, accountable, and professional kitchen culture
Qualifications

  • 3+ years of experience in a professional kitchen (lead line or sous role preferred)
  • Strong foundation in Italian cuisine (traditional techniques preferred)
  • Ability to stay calm, focused, and efficient under pressure
  • Organized, dependable, and detail-oriented
  • Team-oriented mindset with strong communication skills
  • Comfortable working in a hands-on, owner-led environment
  • Authorized to work in the U.S.
