Compensation Range: $65,000.00 - $75,000.00

What You'll Do:
The Sous Chef supports the Chef de Cuisine and Executive Sous Chef by leading day-to-day kitchen execution. This role is primarily responsible for supervising teams during shifts, prep, service including family meals, ensuring consistency, and maintaining operational standards across all stations in a high-volume environment. This role will report to the Chef de Cuisine and other culinary leadership. 
 
Key Responsibilities
 
Kitchen Execution & Supervision
  • Lead and oversee kitchen operations during service, ensuring timely execution and consistency of all menu items
  • Supervise line teams, prep staff, dish teams, and ancillary kitchens providing real-time direction, coaching, and support
  • Ensure all stations are properly set up, stocked, and maintained throughout service
  • Step into any station as needed to support service and maintain flow of operations
Team Support & Development
  • Train and mentor kitchen staff on recipes, techniques, and station expectations
  • Reinforce company standards, policies, and procedures through daily supervision and coaching
  • Support scheduling and staffing needs as directed by culinary leadership
Food Safety & Quality Control
  • Maintain and enforce all health, safety, and sanitation standards
  • Ensure proper food handling, storage, labeling, and rotation (FIFO)
  • Monitor product quality and address any issues in real time to maintain consistency
Operational Support
  • Assist in maintaining accurate recipe cards, prep lists, temp logs, and production schedules
  • Familiar enough to teach and enforce stations S.O.P.s, line checks, and quality logs
  • Communicate operational or product needs to culinary leadership
  • Support family meal execution and daily kitchen organization
Communication & Team Culture
  • Communicate clearly and efficiently with team members during service and prep
  • Foster a positive, professional, and team-oriented work environment
  • Lead by example through strong work ethic, accountability, and consistency
Additional Duties
  • Perform other responsibilities as assigned to support business needs and evolving operations
  • Provides overside and delegates cleaning responsibilities for and with the Dish/Steward team
Qualifications & Skills
  • Minimum of 2–3 years of progressive culinary experience in high-volume kitchen environments, with supervisory responsibilities
  • Large arena or stadium culinary experience is a plus.
  • Strong culinary fundamentals, including knife skills, cooking techniques, and food safety knowledge
  • Proven ability to execute consistently in a fast-paced, high-pressure service environment
  • Experience training or mentoring kitchen staff preferred
  • Strong communication, organization, and problem-solving skills
  • Ability to work a flexible schedule, including evenings, weekends, holidays, and extended hours as needed
  • Regular and dependable attendance is an essential function of this position
  • Ability to effectively communicate with a diverse team
  • Ability to lift and carry up to 50 lbs.
  • Food Handler certification is required within 30 days of hire
  • Experience in immersive, entertainment-driven dining environments is a plus
Preferred:
• Bilingual in Spanish

Physical & Environmental Demands:
• Able to distinguish colors and see both up close and at a distance 
• Able to lift and carry up to 50 pounds 
• Able to use manual dexterity, gross motor skills, and fine motor skills 
• Must be able to walk at least 10,000 steps per shift, including stairs, inclines, and declines 
• Able to pivot, transition between seated and standing positions, kneel, stoop, and lift throughout shifts  
• Able to work in confined spaces 
• Comfortable working in loud, distracting environments 
• Able to multitask and work efficiently with speed, accuracy, and composure in a fast-paced, high-volume restaurant and entertainment venue under pressure
