Oversees the activities of the kitchen staff and monitors food production and presentation in the absence of the Executive Chef.Primary DutiesReasonable accommodations may be made to enable individuals with disabilities to perform the essential functions. These duties and responsibilities will be rated on the Annual Performance Review.* Prepare daily production list.* Ensure that all stations remain stocked before and during the meal period.* Verify that kitchen staff follow all recipes and portion servings correctly.* Keep kitchen, dish, and storage areas clean and organized.* Place food and supply orders as directed.Additional Responsibilities* Assist in hiring and training employees according to company standards.* Set excellent customer service and work examples.* Manage staffing levels throughout shift.* Oversee kitchen labor and food cost to budgetary requirements.* Perform other related responsibilities as assigned.Qualifications: Education, Experience, and Certification(s)* High school diploma or General Education Development (GED) required.* 3 to 5 years progressive professional cooking experience required.* A minimum of two years working in management required.* Culinary experience in a hotel or banquet hall preferred.* ServSafe Manager certification or able to retain within 6 months required.Knowledge, Skills, and Abilities* Strong interest in training and coaching Ability to fill-in for any kitchen position Demonstrated leadership ability.* Computer literacy: MS Word and Excel Works well under pressure.* Commitment to quality service, and food and beverage knowledge.* Basic math skills.* Understanding of proper use and maintenance of major kitchen equipment, including stoves, refrigeration, slicer, knives, and dish machine.* Professional communication skills, oral and written.* Ability to work in a high-energy and demanding environment.* Organization and leadership skills.* Demonstrates strong leadership skills and is a team player.
