Duties and Responsibilities:

• Manages, directs and supervises all back-of-house, culinary operations.
• Creates/selects food and beverage preparation products and menus best suited to our guests.
• Ensures all Team Members within culinary are properly trained in the performance of their job duties.
• Establishes and maintains effective and efficient department procedures & controls. 
• Responsible for hiring, managing performance & firing culinary staff.
• Prepares annual budgets, operating forecasts and other required divisional reports
• Establishes and maintains contact w vendors.
• Works closely with Team Members to ensure streamlined, efficient culinary operation
• Maintain a department that allows management to be approachable and to be a support for subordinate staff.
• Breaking down of deliveries.
• Performs all other duties as requested or assigned.

Job Requirements:

• 3 – 5 years culinary leadership role, in gaming or hospitality environment
• Culinary Degree strongly preferred
• Illinois Food Handler Certification required.
• Excellent oral and written communication skills.
• Excellent leadership / motivation skills.
• Excellent organization and planning skills.
• Knowledge in various computers programs including Microsoft Office (Word, Excel, etc.).
• Basic budgeting and mathematical skills.
• Ability to communicate with Team members and guests
• Ability to successfully fulfill the pre-employment process
• Ability to work flexible shifts and days of the week including holidays
• Ability to obtain and maintain all necessary licensing
• Frequent walking, standing, kneeling, twisting, bending and lifting
