The Supervisor – Stewarding is responsible for supervising daily stewarding operations, ensuring cleanliness, sanitation, and efficiency throughout all kitchen and dining support areas. This role oversees the stewarding team, coordinates back-of-house cleaning activities, and ensures compliance with health and safety standards. The Supervisor plays a vital role in maintaining a clean and safe environment for both guests and team members.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Supervises stewarding staff to ensure all dishwashing, sanitation, and cleaning duties are performed effectively and efficiently.
  • Creates and maintains daily staff schedules to support operational needs.
  • Coordinates with culinary and service teams to ensure timely back-of-house support and cleaning.
  • Ensures proper and safe use of approved cleaning chemicals, equipment, and sanitation procedures.
  • Monitors and performs deep cleaning of kitchen equipment, walls, floors, and walk-ins.
  • Assists with dishwashing, floor maintenance, and trash removal when necessary.
  • Maintains cleanliness and organization in all stewarding areas throughout all shifts.
  • Busses, cleans, and resets tables as needed to support front-of-house operations.
  • Reports equipment issues or safety hazards to management promptly.
  • Performs other job-related duties as assigned.

SUPERVISORY RESPONSIBILITIES:

  • Leads, trains, and supports the stewarding team to uphold departmental service and cleanliness standards.
  • Recruits, orients, and evaluates team members, promoting personal development and accountability.
  • Provides coaching, counseling, and performance feedback; administers disciplinary actions when necessary.
  • Enforces safety, sanitation, grooming, and attendance standards.
  • Develops and maintains efficient operational systems and checklists for stewarding tasks.

QUALIFICATIONS:

  • Knowledge of sanitation procedures, cleaning agents, and stewarding equipment.
  • Strong organizational and leadership skills with the ability to manage a team in a high-volume kitchen environment.
  • Excellent communication and interpersonal skills.
  • Ability to remain calm, focused, and efficient in a fast-paced setting.
  • High regard for cleanliness, teamwork, and safety.

EDUCATION and/or EXPERIENCE:

  • High school diploma or equivalent preferred.
  • Associate’s degree in Hospitality Management or a related field is preferred.
  • Food Safety Manager Certification required or must be obtained upon hire.
  • Minimum of 2–4 years of experience in stewarding or kitchen sanitation, including at least 1–2 years in a supervisory role.
  • Proven ability to lead stewarding teams and oversee cleanliness and sanitation in a high-volume kitchen or food service environment.
  • Knowledge of dishwashing equipment, cleaning procedures, and chemical safety standards.
  • Experience with scheduling, inventory of cleaning supplies, and ensuring compliance with health regulations.
  • Strong communication, leadership, and organizational skills.
  • Prior experience in a casino, resort, or large hospitality operation is preferred.

LICENSES, CERTIFICATES, REGISTRATIONS:

Must have successfully completed a background check and obtained a gaming license issued by the Morongo Gaming Agency, as required. 

LANGUAGE SKILLS:

Must be able to read and interpret documents in English, such as instructions, guidelines, policies, and procedures. Must also be able to communicate clearly and effectively with team members, management, and guests.

  • Communication Skills: Must be able to communicate clearly, professionally, and effectively with stewarding staff, culinary teams, banquet departments, and management; responsible for giving direction, monitoring team performance, and ensuring cleanliness and sanitation standards are upheld across all kitchen and service areas.
  • Lifting and Carrying: Frequently lifts and carries dish racks, kitchen equipment, waste containers, and cleaning supplies weighing up to 50 pounds; may involve overhead lifting and moving heavy or bulky items.
  • Manual Dexterity: Regularly uses hands and fingers to operate dish machines, manage sanitation tools, handle inventory, and complete logs or shift reports.
  • Mobility: Continuously moves throughout dish areas, kitchens, storage rooms, and event spaces; requires standing, walking, bending, lifting, reaching, and stooping for extended periods while monitoring or assisting staff.
  • Stationary Work: Occasionally remains seated while completing administrative tasks such as scheduling, inventory, incident reporting, or reviewing safety checklists.
  • Tool Operation: Frequent use of dish machines, mop buckets, sprayers, carts, chemical dispensers, and standard cleaning tools; ensures all equipment is used and maintained properly by the team.
  • Visual Acuity: Requires near and far vision to inspect cleanliness of dishware and kitchen areas, check equipment operation, and ensure safety compliance and team accountability.
  • Working Conditions: Routinely works in wet, hot, fast-paced kitchen and dish environments with exposure to cleaning chemicals, steam, slippery floors, and noise. Regular exposure to a smoking environment while transitioning through casino or public areas.

WORK ENVIRONMENT:

This is a dynamic, fast-paced environment that requires the ability to adapt and perform under pressure. The casino operates with moderate to loud noise levels and is a smoking environment, requiring team members to work comfortably in these conditions.                              

WORKING HOURS:

Morongo Casino Resort & Spa operates 24 hours a day, 365 days a year; therefore, flexibility in scheduling is essential. Team members must be available to work shifts that may include evenings, weekends, holidays, and special events. Schedules are subject to change based on business needs and may include overtime, as well as work on both weekdays and weekends.
