About the Role
We're hiring a Sushi Chef or Wok Chef. You do not need to be perfect at both we re open to strong candidates in either track:
Maki/hand rolls/nigiri (as needed), fish prep, rice, sauces, garnishes, station organization.
High-heat cooking, timing/pickup, mise en place, sauces, consistency under pressure.
Because we re a small kitchen, everyone supports the team beyond their main station including prep, organization, and closing duties.
What You'll Do:
- Execute service on sushi station and/or wok station based on your strengths
- Prep and portion ingredients, label/date, maintain pars, and stock stations
- Keep station organized, clean, and service-ready (clean-as-you-go)
- Follow sanitation, food safety, and allergen procedures consistently
- Support deliveries, FIFO rotation, and inventory organization
- Dishwashing + cleaning every shift: keep dish area organized, wash/put away, and complete end-of-night cleaning (floors, trash, stations, equipment wipe-down)
Standards & Policies (Non-Negotiable)
- No phone use during shift (stored away; emergency only with manager approval)
- No smart watch / earbuds/headphones during shift
- Uniform + hygiene required (non-slip shoes, hair restrained/hat as required)
- Professional language & attitude (respectful, calm, team-first)
- Food safety is non-negotiable: handwashing, glove use when needed, label/date/FIFO, allergen awareness
- Consistent attendance required
Minimum Requirements (must have at least ONE)
- Sushi experience (fish handling, rice, rolls/nigiri)
- Wok/Asian line experience (high heat, speed, timing)
