The Gilpin Casino is currently in search of a "Line Cook I-Lucille Malones Restaurant". We first opened our doors in 1992 following the legalization of gambling. Situated in the heart of the storied gaming district, this historic building offers the same "Old West" charm as it did in 1869. The Gilpin Casino encompasses more than 37,000 square feet with 400 slot machines and Lucille Malone's Restaurant that serves legendary comfort food.

Essential Job Responsibilities and Duties:
- Assist assigned stations with plating, garnishing, restocking, and preparation
- Maintain station organization and readiness during peak periods
- Anticipate needs and respond quickly to requests from station leaders
- Prepare simple proteins, vegetables, and garnishes according to standards
- Use thermometers and visual cues to ensure proper doneness and safety
- Maintain consistency in color, texture, and presentation
- Reheat sauces and components without breaking, scorching, or degrading quality
- Maintain proper holding temperatures
- Read tickets accurately and understand firing order
- Respond promptly to verbal calls and instructions
- Coordinate timing with other stations
- Plate items cleanly and precisely according to standards or reference images
- Maintain presentation consistency
- Other related duties including but not limited to complying with the following: Food Safety Guidelines, Colorado Limited Gaming Act, Colorado Gaming Rules and Regulations, Colorado Internal Control Minimum Procedures, Colorado Liquor and Beer Codes, Federal requirements for Anti-Money Laundering, Company Policies, and IRS reporting
Skills, Education and Other Requirements:
- High School Diploma or Equivalent Work Experience
- Line cook experience preferred
- Knowledge of basic cooking techniques
- Ability to work in fast-paced, high-volume settings
- Food Safety Handler Certification
- Identification that establishes identity
- Identification that establishes the right to work in the United States
