SUMMARY

 

The 3 Bay BBQ Cook is responsible for preparing and cooking high-quality smoked meats and BBQ menu items while ensuring consistent flavor, food safety, and presentation standards. This position maintains food production schedules, monitors smoking processes, manages prep activities, and supports kitchen operations to ensure an exceptional guest dining experience.

 

RESPONSIBILITIES BY COMPETENCY: (bolded text denotes an essential function of the position)

 

Business Results Orientation

 

  • Prepare and cook BBQ meats using approved recipes, smoking methods, and preparation standards.
  • Monitor smoker temperatures, cook times, and holding procedures to ensure consistent product quality.
  • Maintain production schedules to meet daily demand while minimizing waste.
  • Follow all Standard Operating Procedures (SOPs) related to food preparation and kitchen operations.
  • Assist in inventory management, including tracking meat usage, preparing prep lists, and reporting shortages.
  • Maintain regular attendance and flexibility to work early mornings, evenings, weekends, and holidays as required.
  • Perform additional duties as assigned.

 

Communication

 

  • Communicate product needs, shortages, or equipment issues promptly to management.
  • Maintain professional communication with team members and customers when interacting in service areas.
  • Complete required kitchen logs including temperature logs, food safety logs, and prep documentation.
  • Support teamwork across kitchen and front-of-house operations.
  • Ensure all communication aligns with Wallis Core Values.

 

 

Customer Service Orientation

 

  • Ensure all food products meet company quality, taste, and presentation standards before service.
  • Support timely food production to maintain service speed and overall customer satisfaction.
  • Ensure every guest receives prompt, friendly, accurate service and a consistent dining experience during each shift.
  • Address customer concerns promptly and professionally, resolving issues to maintain guest satisfaction.
  • Maintain restaurant cleanliness, organization, appearance, and product presentation standards at all times.
  • Follow uniform and appearance standards consistently.
  • Assist with customer special requests while maintaining approved recipe and quality standards.
  • Lead by example by demonstrating strong customer service behaviors and reinforcing service expectations with the team.

 

Developing Talent

 

  • Assist in training new kitchen staff on BBQ cooking techniques, smoker operation, and safety procedures.
  • Support cross-training efforts to maintain operational coverage.
  • Participate in ongoing learning related to BBQ preparation, food safety, and kitchen efficiency
  • Ensure that staff strictly adheres to company policies, procedures, and job descriptions.
  • Recognize and celebrate employee success and performance by appropriately distributing STAR points.
  • Actively pursue ongoing self-development and growth, including obtaining required certifications.

 

Safety

 

  • Ensure compliance with all food safety, sanitation, and health department regulations.
  • Maintain a clean, organized, and safe cooking and prep environment by correcting hazards promptly and reinforcing safety procedures.
  • Immediately report any safety hazards, equipment malfunctions, or workplace injuries and follow required reporting procedures.
  • Follow proper knife handling, lifting, and equipment safety practices at all times.
  • Complete and maintain all required safety and food safety training and certifications, including Hepatitis A.

 

Technical Expertise

 

  • Oversee and operate smokers, grills, ovens, slicers, and other kitchen equipment safely and effectively, ensuring proper maintenance of all kitchen equipment and facility systems.
  • Ensure accurate completion of food safety logs, temperature logs, and cleaning checklists in accordance with operational requirements.
  • Maintain proper food storage, labeling, rotation, and holding procedures to ensure product quality and compliance.
  • Follow maintenance and cleaning schedules for all kitchen equipment and production areas.
  • Maintain knowledge of and ensure compliance with all company policies, procedures, operational standards, and kitchen guidelines.
  • Ensure proper merchandising, menu execution, and product availability to meet customer demand.

Education:                              High school diploma or equivalent preferred.

                                                                 

Experience:                             1+ year of cooking, BBQ, or food service kitchen experience preferred.

 

Language Skills:                     Ability to read, write, speak, and understand English in a manner that is

sufficient for effective communication with groups of managers, clients,

customers and the general public.

 

 

Skills and Abilities:              • Knowledge of BBQ smoking methods, seasoning, and meat preparation techniques

                                                • Ability to work in a fast-paced kitchen environment

                                                • Strong attention to detail and quality standards

                                                • Ability to follow recipes and production schedules

                                                • Ability to lift, carry, and handle bakery supplies and equipment

                                                • Strong teamwork and organizational skills

 

Technology, Tools,

And Equipment:                     Smokers, grills, ovens, slicers, thermometers, knives, food prep equipment, kitchen POS or ticket systems as applicable.

                                                               

Certificates, Licenses

and/or Registrations:             ServSafe Food Handler or Food Protection certification preferred or required within designated timeframe.

 

Other:                                      Hepatitis A Vaccination (where required) Willingness to work an irregular schedule including evenings, weekends, and holidays.
