State Hospital West is seeking a Cook Senior to provide lead-level food preparation and kitchen support for the Nampa campus. The campus kitchen prepares and serves meals for three state-operated facilities, providing essential food services to patients, clients, and youth. This position helps ensure meals are prepared safely, accurately, and on schedule while providing direction and training to other food service staff.

SHW is a 16-bed Adolescent Psychiatric Treatment facility serving youth ages 11 to 18. Nestled between Ridgecrest and Centennial golf courses on a picturesque piece of state property along the Nampa Interstate 84 corridor , SHW offers a tranquil setting for healing and growth. SHW provides critical inpatient psychiatric care for Idaho adolescents experiencing the most severe and persistent mental health challenges. We work in close partnership with families and communities to help our youths transition back to successful community living. SHW is accredited by The Joint Commission and certified by the Centers for Medicare & Medicaid Services.

This position is not eligible for telework.

EXAMPLE OF DUTIES:

• Prepare and cook meals according to established menus, recipes, and dietary requirements.
• Provide work directions, training, and assistance to other food service staff.
• Coordinate food preparation and meal service for three facilities on the Nampa campus.
• Monitor food quality, portion sizes, temperatures, and proper food handling procedures.
• Follow established sanitation, food safety, infection control, and workplace safety requirements.
• Assist with ordering, receiving, storing, and maintaining an adequate supply of food and kitchen materials.
• Maintain required records related to food preparation, temperatures, inventory, and sanitation.
• Operate, clean, and maintain commercial kitchen equipment and work areas.
• Coordinate with facility staff regarding special diets and individual meal requirements.
• Assist with maintaining efficient kitchen operations and continuity of meal service.

MINIMUM QUALIFICATIONS:

You must possess all the minimum qualifications below to pass the exam for this position. • Good knowledge of methods and materials used to prepare foods for large-scale institutional use, experience following recipes and menus AND calculating volume measurements used in cooking. Typically gained by approximately two years' experience performing large-scale quantity cooking in an institution or large restaurant setting.
• Good knowledge of use and care of cooking utensils and equipment AND sanitation and safety practices used in food handling and preparation. Typically gained by approximately two years cooking experience that included these responsibilities.
• Experience training others in food preparation and serving. Typically gained by six months or more lead work or supervisory experience in a food service setting OR three months experience and completion of a formal training course in the element of supervision.
• Experience performing large-scale quantity cooking. Typically gained by a minimum of TWO years' experience performing large-scale quantity cooking, following recipes and menus and calculating volume measurements used in cooking.
• Some knowledge of food values and basic nutrition in the preparation of special diets. Typically gained by six months work experience or completion of two classes covering how to prepare meals for clients with diabetes, food allergies or other diet restrictions.
• Some knowledge of supervisory practices. Typically gained by 6 months leadwork or supervisory experience in a food service setting.
