THE ROLE
The Executive Chef is responsible for the design and execution of the facility's menu offering and managing the day-to-day culinary operations. The individual will work as an integrated member of the San Antonio Spurs Performance and Wellness Team and lead the food service operations for the team's players and staff.
ESSENTIAL FUNCTIONS
- Overall management of all culinary operations, including supervising sous chefs, daily schedules, coordinate and actively participate in event operations and monitor food and labor cost.
- Ensure all products used in the preparation of menu items meet our high standards
- Work collaboratively with the team's sports dietitian to develop menus that align with the dietary needs of the players and contribute to the overall success of the Spurs Performance Program.
- Create innovative menu offerings in response to guest and client feedback.
- Adapt recipes and menu items to meet special dietary needs of players.
- Assist in the planning and management of meals for team flights out of San Antonio.
- Coordinate menus with the players' personal chefs (as needed) in coordinator with the team's sports dietitian.
- Collaborate with the team's sports dietitian in managing the team's food service software for tracking recipes and weekly menus.
- Work as an integrated member of the Spurs Performance and Wellness Team, working closely with the sports dietitian, sports science, strength and conditioning, and medical staff.
- Approves requisitions for supplies and food items.
- Oversees the hiring, training, and supervision of the culinary team. Evaluate performance, give guidance and discipline as necessary.
- Monitors all food preparation and kitchen activities to ensure compliance with Health Department regulations.
- Writes, costs, tests, maintains, and updates all menu specifications, recipes and pictures, production forecasts, and ensures same are being followed.
- Adheres to and enforces inventory and labor control measures; performs inventory counts as requested.
- Ensures all workstations, storerooms and dining areas remain clean, sanitized, safe and in proper working order at all times.
QUALIFICATIONS
To perform this job successfully, the candidate must be able to perform each essential duty above at the highest levels. The requirements listed below are representative of the knowledge, skill, and/or ability required.
- Extensive experience as an executive chef in a high-volume environment, including five years' experience as an executive chef in a sports setting.
- Culinary or food management degree/certificate or bachelor's degree in related field. Current ServSafe and Texas Department of Health Food Manager certifications.
- Professional training through a culinary education or working in a fast-paced, high-volume fine dining restaurant/catering facility; full service casual dining preferred.
- Experience in sports nutrition, menu planning, and feeding athletes in a culturally diverse setting.
- Extensive knowledge of food and beverage menu, specials and services offered.
- Knowledge of industry trends related to performance nutrition, including healthy cooking methods, food quality, presentation, and food safety.
- Ability to coach, train and develop efficient and successful team members.
- Ability to multi-task in a fast paced, team orientated setting.
- Ability to read, speak and write in English.
- Must have sufficient mobility to perform assigned tasks including constant reaching, bending, stooping, wiping, pushing, and pulling for extended periods of time.
- Must have the ability to lift, push, pull approximately 50lbs.
- Must be able to stand or walk for long periods of time.
- Must be available for all Stadium events.
- Must be able to work extended hours due to business requirements including late nights, weekends and holidays.
- Practice safe work habits, follow all safety policies and procedures and regulations, complete company-wide safety training and additional job specific safety training.
