Executive Chef

The Hilton Richmond Hotel & Spa/Short Pump is searching for an experienced Executive Chef with a dedication to leading others, a creative flair and a passion for hospitality. As the Executive Chef, you will play a key role in maintaining a culture and expectation of excellence while creating lasting positive memories for our guests.

The Hilton Short Pump is a flagship property of Shamin Hotels, Central Virginia's largest hotel management company. We own and operate more than 78 full- and select-service hotels under the Hilton, Hyatt, Marriott, InterContinental and Choice flags.

Job Duties:

  • Plan and direct food preparation and culinary activities.
  • Modify menus or create new ones that meet quality standards.
  • Estimate food requirements and food/labor costs.
  • Ensure that all supplies are ordered, stocked, and properly stored.
  • Recruit, hire, train and manage kitchen staff to ensure quality culinary dishes are produced and guest satisfaction standards are maintained.
  • Work with management to arrange for equipment purchases and repairs
  • Provide and model effective guest service, communicate expectations and motivate staff to live up to the same expectations.
  • Develop interesting and innovative ways to promote incremental revenue for outlets, using relevant marketing techniques to drive guest usage of food and beverage operations.
  • Be responsive to and find creative ways to accommodate reasonable guest requests for menu selections, event planning, etc.
  • Work with appropriate departments and recommend strategies to consistently provide an outstanding Food and Beverage experience for our guests.
  • Review new techniques for food preparation and presentation in a manner and variety that maximizes guest satisfaction and minimizes food costs.
  • Provides the vision, leadership and strategy to inspire associates to deliver exceptional service and drive financial success.
  • Ensure compliance with all health and safety and other food and beverage regulations; keep current on all matters pertaining to the food and beverage industry
  • Maintains appearance, upkeep and cleanliness of all Kitchen equipment and facilities.
  • Ensure a professional attitude and proper attire when on property, ready to meet or service a guest at any time
  • Maintains records of special events, house counts, food covers and daily business volumes.
  • Complete monthly Kitchen inventories.
  • Establishes and maintains professional business relations with vendors.
  • Flexibility to work various schedules as business demands including nights, weekends and holidays.

Qualifications

  • Associate degree in culinary arts and 5 years' experience in high volume corporate, hotel, or restaurant service OR 7 years' experience in corporate, hotel or restaurant in food preparation and management.
  • Supervisory experience required.
  • Safe food handler certification preferred or certification obtained within one year of hire.
  • Must be able to work with and understand financial information and data, and possess basic mathematical skills.
  • Proficient in MS Office applications (Word, Excel, Outlook) and use of internet-based platforms.
  • Ability to read, write, and speak English sufficient to understand and communicate with team members and guests.
