Position Summary
The Ramen / Tapas Line Cook is responsible for executing ramen bowls and small plates with precision, speed, and consistency. This role requires proficiency in using deep fryers, ramen boilers, grill tops, and other kitchen equipment while maintaining strict adherence to JINYA corporate recipes, food safety standards, and cleanliness expectations.
Key Responsibilities
- Prepare and execute ramen and tapas items according to JINYA corporate recipes and plating standards
- Operate and maintain ramen boilers, deep fryers, grill tops, and other kitchen equipment safely and efficiently
- Ensure proper cook times, temperatures, and portion control
- Maintain clean, organized, and fully stocked workstations at all times
- Follow all food safety, sanitation, and health department guidelines
- Properly label, date, and rotate products using FIFO standards
- Monitor product quality and communicate issues to management immediately
- Maintain awareness of ticket times and kitchen flow during peak service
- Assist with opening and closing duties
- Work collaboratively with BOH team members to ensure smooth service
- Follow corporate uniform and appearance standards
Qualifications
- Previous line cook experience preferred (ramen or high-volume experience a plus)
- Strong knowledge of proper fryer, grill, and boiler operation
- Ability to multitask in a fast-paced environment
- Understanding of cross-contamination prevention and food safety standards
- Strong attention to detail and plating consistency
- Ability to stand for extended periods and lift up to 50 lbs
- Reliable, punctual, and team-oriented
