Yacht Club is the signature seafood restaurant at Hotel Trinity, Autograph Collection — Austin's newest luxury boutique hotel, opening late 2026 at the corner of Trinity and Fifth Streets in the heart of downtown Austin, TX. As the only Marriott Autograph Collection hotel in Austin's city center, Hotel Trinity is a 258-room private hideaway located next to Antone's in the historic 6th Street entertainment district. What You'll Do

• Mentor entry-level cooks and culinary apprentices at Yacht Club inside Hotel Trinity Austin — overseeing daily prep and production to the standards of a pre-opening fine dining seafood restaurant in downtown Austin, TX
• Execute all back-of-house (BOH) operations at this upscale Austin hotel kitchen — following White Lodging F&B procedures, health codes, and federal food safety guidelines across every shift
• Ensure proper food handling, storage, and sanitation at all times in accordance with HACCP standards and Marriott Autograph Collection brand requirements
• Help maintain food cost and labor cost targets — contributing to the financial performance and operational efficiency of the Yacht Club culinary team
• Check ingredient freshness; uphold all recipe standards, oyster bar specifications, and portion-use records consistently across the kitchen team
• Positively influence guest feedback through consistent food quality, precise plate presentation, and service reliability that builds Yacht Club's reputation as a premier Austin seafood dining destination
• Foster a respectful, cooperative team culture in this pre-opening hotel kitchen environment — setting the standard for professionalism and collaboration from day one

What You'll Bring

• Hands-on experience with commercial kitchen equipment in a high-volume hotel or upscale restaurant kitchen environment — required for this senior line cook role at Yacht Club in Austin, TX
• Proficiency in sautéing, broiling, frying, roasting, butchery, garde manger, pantry, and breakfast cookery — seafood cookery and oyster bar experience a strong plus for this role at Yacht Club
• Culinary degree or apprenticeship preferred — not required; we will train the right candidate with strong kitchen instincts and a passion for seafood-forward fine dining
• Ability to stand and work at a fast pace for extended periods in a high-volume pre-opening fine dining hotel kitchen in downtown Austin
• Active unexpired Food Handler's Certification — required
• Prior hotel culinary experience preferred — experience in a Marriott Autograph Collection, luxury boutique hotel, or upscale seafood restaurant kitchen in the Austin, Texas market a significant advantage
